Prepare a healthy dinner whose preparation will not take you all eternity! Exactly these are zucchini pancakes with herbs and high protein content. Will you try them together with us?
For dough we will need:
- 400 g of courgettes (approx. 2 smaller pieces)
- 50 g of wholemeal spelt flour
- 40 g of hard cheese (Edam, Parmesan or Gouda)
- 2 eggs
- ½ teaspoon of ground caraway
- ½ teaspoon of dried herbs (oregano, basil)
- ¼ teaspoon of black pepper
- a handful of fresh herbs (chives, basil, parsley)
- salt depending on taste
- olive oil spray

Rinse the zucchini under water, dry and then grate finely into a bowl. Add a little bit of salt and let stand for at least 5 minutes. Then put the zucchini in a clean towel and squeeze it thoroughly to remove the water. Meanwhile, grate the cheese finely and chop the fresh herbs. When the zucchini is dried, put it in a bowl and add eggs, flour, grated cheese, sliced herbs and spices. Finally, we mix all ingredients together until we obtain a consistent mass.
Spray a little bit of olive oil over the hot pan and put the dough by using a spoon on a pan to make a pancake. We bake them about 2 minutes from each side. Serve the pancakes warm with fresh vegetables or calorie-free sauce. Enjoy their delicious taste!
