Thanks to lighter filling made from fresh ricotta or light mayonnaise, you’ll get a perfectly balanced and easy-to-prepare snack.
For the base, you will need:
- 8 eggs
For the ricotta filling, we will need:
- 70 g ricotta
- the green part of one spring onion
- juice from ½ lemon
- ground pepper to taste
- salt to taste
For the mayonnaise filling, we will need:
- 30 g light mayonnaise
- 30 ml pickle juice
- 20 g mustard
- ground paprika to taste
- ground pepper to taste
- salt to taste

Preparation:
Start by preparing the eggs. Boil them in boiling water for 10 minutes, then cool them in ice-cold water. Peel them, cut them in half and remove the yolks.

Divide the yolks into two bowls so that each contains about 4 yolks. To one bowl, add the mayonnaise, pickle juice, mustard, pepper, salt and blend until smooth.
To the second half of the yolks, add the ricotta, lemon juice, pepper, salt and blend until smooth. Finally, add finely chopped spring onion to the mixture to your taste.
Then take a piping bag and use it to fill the egg whites with the mixtures. Once filled, sprinkle the ricotta eggs with finely chopped spring onion. Sprinkle the mayonnaise eggs with some ground paprika and they are ready to serve.
