If you are craving something salty, we’ve got a great alternative to classic crisps. Try the recipe for fluffy curd scones with Parmesan cheese and let their delicate dough melt on your tongue. They are an ideal quick snack, but also an excellent bite for trips or mid-morning snack at school and work. Let’s try them out!
- 250 g whole-grain spelt flour
- 130 ml milk
- 100 g soft low-fat curd
- 30 g Parmesan cheese
- 30 ml rapeseed oil
- 1 egg
- ½ packet dry yeast (4 g)
- 1 tsp cane sugar
- 1 tsp Himalayan salt
- 1 tsp thyme (fresh/dry)

First of all, prepare the sourdough – mix the sugar with the yeast in warm (not hot) milk and let it rest for about 5 minutes. Meanwhile, mix the flour with salt, thyme and grated Parmesan in a larger bowl. Then pour the sourdough, oil, curd to the bowl and knead a uniform and rather non-sticky dough. Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour. When the dough has risen, roll it out on a board covered with flour, so that it’s approximately 1.5 cm thick. Start cutting out individual scones from the dough and place them on a baking tray lined with baking paper. Let them rise a little more on the tray for at least another 15 minutes. Finally, brush them with egg wash, sprinkle with sesame seeds and a few grains of salt. Bake the scones at the temperature of 180 °C until golden brown, i.e. for about 10-15 minutes depending on their size. The scones can be served immediately after baking. Enjoy every bite!
