Fitness Recipe: Protein Pastel de Nata

Today’s recipe will take your taste buds all the way to sunny Portugal. We’ll be preparing a local speciality that you can find on almost every corner there. Of course, we’ve made a few adjustments to suit our preferences. For example, we added some protein powder to the cream to make it more nutritional. Who could resist?

Method:

Start by preparing a muffin baking tray and spraying it with coconut oil spray. Then take a 120 g piece of puff pastry, keep it rolled in a log and cut it into 2 cm (almost an inch) pieces. Unroll the pieces and they will turn into strips that you can roll out into thin discs. Use these discs to line the entire area of each muffin hole evenly, forming a pastry tart that will be filled with the cream. Now let’s move on to preparing the cream.

Pour milk into a small saucepan, add the piece of lemon peel and the whole cinnamon stick, and bring it to a boil. Remove the boiling milk from the heat, then mix in xylitol, flour and protein powder using a whisk and remove the cinnamon stick and the piece of lemon peel. The cream should be smooth. If any lumps have formed, strain it through a sieve or blend it with a stick blender.

In a separate bowl, beat the egg yolks and with a spoon gradually mix in about 100 ml of the hot cream. Then pour the egg yolk mixture back into the saucepan with the hot cream. Stir everything together slowly and bring it to a boil. The consistency should be similar to a thin custard. Pour the hot cream into the prepared pastry tarts and bake at 240 °C for about 10 minutes. Before serving, sprinkle them with ground cinnamon and they’re ready to go on a plate.
