This recipe for crispy chicken strips in a tortilla offers the perfect balance between rich flavor and quality ingredients to support your fitness goals. Thanks to the high protein content and the combination of fresh salad with creamy mayonnaise, it is an irresistible meal that will diversify any healthy diet.
For the strips, we will need:
- 350 g chicken breast
- 60 g cornflakes
- 1 egg
- 1 teaspoon ground paprika
- ½ tsp of dried garlic
- ½ tsp oregano
- ground pepper to taste
- salt to taste
- canola oil spray
For the cabbage salad, we will need:
- 300 g red cabbage
- 10 g cane sugar
- ½ tsp salt
- juice from ½ lemon
- a handful of fresh herbs (mint, parsley, coriander)
For serving, we will need:
- 80 g light mayonnaise
- 80 g onion chutney
- 5 tortillas

Preparation:
First, cut the chicken breast into long pieces or strips. Lightly salt and pepper them, and in a bowl, mix them thoroughly with a beaten egg so that the meat is beautifully coated and does not remain dry. In the meantime, crush the cornflakes into smaller pieces (this works best if you put them in a bag and squeeze them a bit) and mix them with ground paprika, oregano, and garlic powder.
Then, immediately coat each piece of egg-covered meat in the prepared seasoned flakes. Place them in the air fryer basket, lightly spray with canola oil, and bake at 200°C for approximately 15 minutes until the strips are beautifully crispy and golden brown.

While the meat is baking, prepare a fresh salad. Slice the cabbage into thin strips and mix it in a bowl with chopped herbs, drizzle with lemon juice, and season with salt and cane sugar. You can massage the cabbage slightly with your hands to make it tender.
Finally, take a tortilla and spread it with mayonnaise and onion chutney. Layer our cabbage salad generously on top and add the finished chicken strips. Simply wrap the tortilla tightly and sear it briefly on both sides in a dry pan. This will beautifully combine the flavours, and you can serve it immediately.
