Fitness Recipe: Tomato Soup

Soup is a great way to get your daily dose of vegetables without having to eat a cold salad. This one will win you over not only with its smooth consistency but also with its simple preparation and fantastic taste, thanks to the combination of roasted vegetables and cream.

Ingredients for the soup:

  • 800 g fresh tomatoes
  • 50 ml single cream
  • 30 ml olive oil
  • 1 onion
  • 1 clove of garlic
  • stock as needed (or simply use water as an alternative)
  • ground pepper to taste
  • salt to taste

Method:

Chop the tomatoes into larger pieces, cut the onion into eighths, and slice the garlic bulb in half. Place the vegetables in a small roasting tray, drizzle with oil, season with salt and pepper, and roast at 200°C for about an hour.

Squeeze the roasted garlic out of its skin and blend it together with the roasted vegetables until smooth. Stir in the cream and add water or stock as needed to achieve your desired consistency. Season with salt and pepper to taste, and it’s ready to serve. Drizzle with olive oil and garnish with fresh basil or enjoy with a slice of bread.
