Make a strong coffee and let it cool completely. Separate the egg whites from the egg yolks. Whip the egg whites until stiff peaks and the egg yolks until foamy. Subsequently, pasteurize the eggs. Mix xylitol with water and heat up on the stove until you get tiny bubbles at the edge.
