Today’s tasty recipe will transport you to sunny Italy. This time we have prepared delicious focaccia made with leavened dough. It is super easy to prepare. You will fall in love with this fluffy pastry with pieces of olives and cherry tomatoes. Rosemary will make sure of the amazing aroma. Then it’s up to you whether you serve this Italian bread only with olive oil or enjoy it with salad or soup.

Prepare a large bowl and mix flour, fine grain salt, dried yeast, sugar, and a finely chopped sprig of rosemary in it. Add lukewarm water and create a sticky dough. Once you’re done, put it into a bowl and smear it with one tablespoon of olive oil. Cover the bowl with the dough with a cloth and leave it to rise in a warm place.
After about an hour and a half, the dough will double in volume. You can continue with the process. Take it out of the bowl and place it on a baking sheet (we used a size of 36 x 27 cm) lined with baking paper. Then smear it with a second spoon of olive oil and spread it all over the sheet using your fingers. Put it aside again and let it rise for 30 minutes. Then gently push olives cut into halves and pieces of cherry tomatoes into your focaccia. At the end, sprinkle the focaccia with coarse grain salt and the remaining rosemary leaves.
Bake it in the oven preheated to 200 °C for about 25 minutes (until golden). After removing, let it cool for a while, then cut, and serve.
Our tip: Focaccia tastes fantastic with soups, salads or with olive oil.
