Fitness Recipe: Chocolate Orange Sweet Potato Mousse

A delicious dessert does not always have to consist of a large amount of dense dough. Sometimes it is enough to mix just a few ingredients and create a light delicious mousse that everyone, even vegans, can enjoy. We’ve used sweet potato and coconut milk as a base to create the perfect consistency. The combination of cocoa, maple syrup and orange zest will take care of the taste and colour. The day, or at least a few hours, before making this dessert, put a can of coconut milk in the fridge to separate the solid part from the liquid part.

Prepare the sweet potato. Wash it, dry it and cut it lengthwise. Put it in an oven preheated to 200 °C for about 40 minutes, until it is completely soft.

After baking, take it out and let it cool completely. Once cold, scoop out the inside of the sweet potato with a spoon and place it in a blender. Add the solid part of the coconut milk, cocoa, maple syrup and about half of the prepared orange zest. Blend everything together until you have a smooth and fluffy cream. Divide this mixture into the two prepared bowls in which it will be served. Then leave it in the fridge to chill for at least an hour. Finally, sprinkle with the remaining orange zest and crushed cocoa beans.
