Jennifer Aniston’s salad has gone viral thanks to the actress’ popularity in light, healthy and nutritious meals. Its base is a combination of quinoa, chickpeas, cucumber, red onion, feta and fresh herbs, creating the perfect light lunch or dinner. You’ll especially appreciate it during hot summer days.
We’re going to need:
- 240 g cooked chickpeas (chickpeas in brine can also be used)
- 150 g quinoa
- 100 g feta
- 100 g shelled pistachios
- 30 ml olive oil
- 1 cucumber
- 1 red onion
- juice of 1 and ½ lemons
- a handful of mint
- a handful of parsley
- ground pepper to taste
- salt to taste

Instructions:
Cook the quinoa according to the instructions. Finely chop the onion and herbs, cut the cucumbers into small pieces and crumble the feta. Dry-roast and chop pistachios coarsely. Drain the chickpeas and put all the ingredients in a large bowl. Add the cooked quinoa , olive oil and lemon juice and season the salad with salt and pepper to taste.

Mix and serve.
