Before peeling, it is soaked and pre-steamed, which gives it a slightly yellowish colour which disappears after it is cooked. The resulting rice is thus white. The pre-steaming itself brings the advantage that you will not overcook it and guarantees that it will always be al dente. In addition, it does not stick and cooks much faster than classic rice.
