Trehalose is a unique type of sugar (a disaccharide) that occurs naturally in nature and is known for its unique properties. Compared to regular sugar, it has approximately half the sweetness and is therefore used in a 2:1 ratio for sweetening. Thanks to its excellent thermal stability and ability to bind water, it is ideal for culinary experiments, such as baking fluffy desserts, which will stay moist for longer thanks to it, or preparing perfectly creamy homemade ice creams.
