Job's Tears is a gluten-free cereal with fibre that is suitable for both sweet and savoury recipes

Job's Tears is a gluten-free cereal that can be used as an interesting alternative to grains, buckwheat, rice or other similar foods. This tropical raw cereal native to East Asia is also known as coix seed, Chinese pearl barley, or hato mugi. It will be especially appreciated in your diet due to its content of complex carbohydrates. It is also a source of fibre. Furthermore, it is low in saturated fatty acids. Since it is a source of protein, it also contributes to the growth and maintenance of muscle mass, as well as the maintenance of normal bones. It is gluten-free, and so its benefits can be reaped even by people who avoid gluten for various reasons.

Despite being a lesser-known ingredient, Job's tear has many interesting uses in the kitchen. If you want to indulge in a savoury meal, it is suitable as a side dish to meat, fish, tofu or other plant-based meat alternatives. You can also add it to soups, similar to barley grits, for example. It is also suitable as an ingredient in fritters, savoury pancakes, meat balls, salads or spreads. You can go even further and grind it, making it usable as a substitute for traditional flour. It's a great way to thicken soup or sauces to meat or pasta.

This cereal is equally suited to sweet recipes. You can use it, for example, to make a tasty cake, which you can supplement with whey or plant-based protein, fruit or nuts. You can also use grind Job's tear in the batter for cakes, pancakes or crepes. This makes it a versatile ingredient that will add an interesting twist to your favourite recipes.
