Manuka honey MGO 512+ is unpasteurized honey from New Zealand with a laboratory-verified content of methylglyoxal (MGO), containing at least 512 mg per kilogram. This substance gives manuka honey its exceptional status: the more of it the honey contains, the more valuable it is. The HMF level (a key indicator of freshness, age, and careful handling of honey) also shows that the honey has not been exposed to high temperatures and has retained its unique character. It also meets the official definition of monofloral manuka honey, which is regulated in New Zealand by the Ministry for Primary Industries (MPI).

Manuka Honey MGO 512+ – Raw Honey from Northern New Zealand with Laboratory-Verified MGO Content

Manuka honey MGO 512+ comes from the Northland region in northern New Zealand, and its value is determined by its methylglyoxal content.

The manuka shrub flowers for only a few weeks each year, and its nectar is the sole source of the substance from which methylglyoxal forms in the honey. Manuka honey is graded and valued according to its methylglyoxal content. The higher the number, the more concentrated the honey.

Methylglyoxal is characteristic of manuka honey and is associated with its unique properties. The number in the name indicates how many milligrams of MGO are present per kilogram of honey. Ours therefore contains at least 512 mg/kg. The jar contains 250 g, enough for approximately 25 days if you have one teaspoon a day.

How can you verify that it is genuine New Zealand mānuka honey?

New Zealand introduced a mandatory scientific definition of mānuka honey precisely because products that did not meet its criteria were appearing on global markets. This allows you to verify its origin in two ways.

Under the government’s MPI definition. Authenticity is assessed not by the producer, but by the government, and testing is required by law for export. The Ministry for Primary Industries (MPI) has established five indicators—four chemical and one based on pollen DNA—and every batch must be tested by a laboratory recognized by the ministry.

Our honey meets all five criteria, and compliance has been verified by an independent laboratory, specifically under Section 5.1 of the General Export Requirements for Bee Products.

The honey is processed and packaged by New Zealand Health Food Company of Christchurch under the Manuka South® brand, which holds New Zealand government FernMark origin licence No. 100264. You can look up the licence number at newzealand.com. It is a wholly New Zealand-owned company that has specialized in mānuka and other high-quality honeys for over thirty years, and its facility is licensed by MPI and operates under a risk management programme.

What makes our Manuka honey different?

1. Leptosperin as proof of authenticity. It is a substance found in mānuka nectar that cannot be added to honey because it is not commercially produced. MGO content alone does not prove authenticity, but leptosperin does. It is measured in every analysis alongside MGO, DHA and HMF.

2. At least 512 mg of MGO per kilogram. By comparison, ordinary blossom honey contains methylglyoxal in amounts of just a few milligrams. Professor Thomas Henle’s team at the Dresden University of Technology measured a median of 3.1 mg/kg across more than eighty honeys from around the world.¹

3. Monofloral, the highest MPI classification. The New Zealand definition distinguishes between two classes, and monofloral honey must meet all five criteria at the higher thresholds. If it fails to meet even one, it falls into the lower, multifloral class.

4. RAW honey that is never heated on its way into the jar. It undergoes only centrifugation and filtration to remove the wax. Heat causes honey to lose quality irreversibly.

5. HMF below the European limit. This substance forms in honey when exposed to heat, making it the most reliable indicator for identifying raw honey. Regulations permit up to 40 mg/kg, and our honey is below that limit.

6. Every batch is tested by an accredited laboratory. Its MGO, leptosperin, DHA and HMF content is verified using uHPLC and LC-MS/MS methods.

7. FernMark Licence No. 100264, the official New Zealand mark of origin. You can look up the number yourself at newzealand.com.

8. The jar contains just one ingredient. One hundred percent New Zealand honey, nothing else.

How is the quality of GymBeam Manuka honey verified?

Manuka honey is regularly analysed in an independent accredited laboratory using validated methods. Four parameters are tested at the same time, each providing different information:

MGO, or methylglyoxal, is used to rate manuka honey

Leptosperin as an indicator of authenticity that cannot be added to honey

DHA, or dihydroxyacetone, a substance in nectar from which MGO gradually forms

HMF as an indicator of heat treatment and age

In a separate analysis, the honey is also tested for glyphosate residues.

The laboratory determines the MGO, DHA and HMF content using uHPLC, and leptosperin using the even more sensitive LC-MS/MS method, which combines chromatography with mass spectrometry. These are not merely indicative rapid tests.

NPA, or non-peroxide activity, is a parameter you will not find in ordinary honey. All honey has some activity due to hydrogen peroxide, which forms and then breaks down in it. Manuka honey also has activity that does not depend on peroxide at all, and this is what NPA measures. It is monitored in Manuka honey because ordinary honeys do not have it, and, alongside MGO, it is another parameter used to assess Manuka honey.

According to the analysis dated 28 May 2026, the batch contained 533 mg/kg of MGO, above the declared value, 520 mg/kg of leptosperin and 914 mg/kg of DHA. This corresponds to an NPA of 15.3. The HMF value met the European limit of 40 mg/kg.

The product complies with Council Directive 2001/110/EC relating to honey and with European requirements for microbiology, pesticide residues, contaminants and heavy metals. It also holds Halal certification.

How to store and handle Manuka honey to preserve its quality

Manuka honey deserves gentler handling than regular honey.

  • Heat is the only thing that will harm it.
Heat causes HMF to form in honey—the very substance laboratories monitor as an indicator of heat treatment. When making tea, let it cool for a while before stirring in the honey.
  • Use a dry spoon.
Honey absorbs moisture from the air, so a wet spoon or a drop of water in the jar can affect its shelf life.
  • Keep it in the pantry, not the refrigerator.
All it needs is a dry place away from direct sunlight, at a temperature of up to 20 °C.
  • If it crystallizes, there is no need to worry.
Crystallization is normal in unpasteurized honey and does not affect its quality. Simply place the jar in lukewarm water, never hot water.
