Beta-glucans obtained from brewer's yeast of the genus Saccharomyces cerevisiae in the form of Beta-glucans are polysaccharides with a unique structure obtained from brewer's yeast of the Saccharomyces cerevisiae genus. These are known for their fermentation ability and are commonly used in food processing, for example, in the production of beer, wine or baked goods. The cell walls of these yeasts also contain beta-glucans, which are extracted and added not only to food but also to nutritional supplements. Specifically, these are type 1,3 and 1,6 beta-glucans, which are typical of the yeast Saccharomyces cerevisiae.
