Cut the remaining asparagus <strong>into smaller pieces<\/strong>; you can set aside a few of the nice tips for the final garnish. <strong>Wash the zucchini and cut<\/strong> it into larger pieces. <strong>Peel the carrot and dice<\/strong> it into small cubes. Since it&#8217;s tougher than the zucchini, it needs smaller pieces to cook at the same rate. Finally, <strong>peel the onion and garlic, and finely chop<\/strong> both. In a saucepan, heat <a href=\"https:\/\/gymbeam.com\/bio-extra-virgin-olive-oil-vanavita.html\"><strong>olive oil<\/strong><\/a> over medium heat. Add the chopped onion and <strong>saut\u00e9 for about 3\u20135 minutes<\/strong>, until it softens and becomes translucent. Then, <strong>add the garlic<\/strong> and, while stirring constantly, <strong>saut\u00e9 for another minute<\/strong>, until it releases its fragrance. Be careful not to let the garlic brown, as this could make the soup bitter. <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">To the saut\u00e9ed base of onions and garlic, add <strong>diced zucchini, celery, and asparagus<\/strong>. Then lightly saut\u00e9 the vegetables together for a few more minutes. Next, pour in approximately <strong>half a litre of water or vegetable broth<\/strong> and bring the mixture to a boil. Cover the pot with a lid and simmer over low heat for about <strong>15 minutes<\/strong>. Simply cook until <strong>all the vegetables, especially the tougher asparagus pieces, are completely tender<\/strong>. While cooking, remember to season the soup to taste with <a href=\"https:\/\/gymbeam.com\/celtic-sea-salt-gymbeam.html\"><strong>salt<\/strong><\/a><strong> and<\/strong> <a href=\"https:\/\/gymbeam.com\/bio-four-colour-peppercorn-gymbeam.html\"><strong>pepper<\/strong><\/a>. Once the vegetables are tender, we remove the pot from the heat and allow the soup to cool slightly, so we don&#8217;t burn ourselves when blending. Then, we use an immersion blender to <strong>blend everything into a smooth cream<\/strong>.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">We return the blended soup to the stovetop, <strong>add the cream<\/strong>, and then gently warm it for just a short time. It&#8217;s really important that the soup isn&#8217;t actually boiled at this stage, as the cream could curdle. If the cream seems too thick after blending, simply thin it out with a little water. Serve the finished soup warm.
