V dana\u0161njem \u010dlanku boste dobili odgovor na vpra\u0161anje, <strong>zakaj je kombu\u010da tako priljubljena<\/strong> in izvedeli, ali prina\u0161a tudi kak\u0161na tveganja.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Kaj_je_kombuca\"><\/span>Kaj je kombu\u010da?<strong><\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p><a href=\"https:\/\/gymbeam.si\/bio-kombuca-gymbeam.html\" target=\"_blank\" rel=\"noreferrer noopener\">Kombu\u010da<\/a> (izgovorjava <em>[kom-bu-\u010da]<\/em>) ali kombu\u010din \u010daj je <strong>rahlo pene\u010da fermentirana pija\u010da, narejena iz sladkanega \u010daja,<\/strong> ki je v zadnjih letih do\u017eivela velik razcvet. \u010ceprav je ta pija\u010da globalno priljubljenost dosegla \u0161ele v zadnjih letih, njena zgodovina sega v starodavno Kitajsko. Tam je kombu\u010da postala znana kot <strong>\u201e\u010daj nesmrtnosti\u201c<\/strong> ali <strong>\u201eeliksir dolgega \u017eivljenja\u201c.<\/strong><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Izvor imena kombu\u010da je \u0161e vedno nekoliko nejasen. Vendar je najverjetnej\u0161a razlaga, da izvira iz japon\u0161\u010dine, kjer se zdru\u017eita besedi <strong>\u201ekombu\u201c<\/strong> (morska alga) in <strong>\u201e\u010da\u201c<\/strong> (\u010daj). Kombu-\u010da je tako prvotno pomenila <strong>\u010daj iz morskih alg.<\/strong> Vendar pa ima kombu\u010da, kot jo poznamo danes, zelo malo skupnega s tem imenom. Lahko se uporablja tudi beli ali oolong. Ve\u010dina sladkorja se predela, zato kon\u010dna pija\u010da ni preve\u010d sladka.<\/li>\n\n\n\n<li><strong>SCOBY:<\/strong> Kratica za <em>Simbioti\u010dno Kulturo Bakterij in Kvasovk<\/em>, ki zagotavlja sam proces fermentacije.<\/li>\n\n\n\n<li><strong>Za\u010detna teko\u010dina:<\/strong> Obi\u010dajno malo \u017ee pripravljene kombu\u010de iz prej\u0161nje serije ali visokokakovostna kupljena nepasterizirana kombu\u010da. V resnici to ni goba kot taka. Je <strong>belo-rjava spolzka masa z \u017eelatinasto strukturo,<\/strong> ki plava na povr\u0161ini. Med fermentacijo se SCOBY lahko spremeni. Njen kon\u010dni okus je odvisen od <strong>vrste uporabljenega \u010daja,<\/strong> dol\u017eine fermentacije in morebitnih dodanih arom, kot so sadje, zeli\u0161\u010da ali za\u010dimbe.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Pri kraj\u0161i fermentaciji je kombu\u010da <strong>bolj sladka in blaga,<\/strong> medtem ko dalj\u0161a fermentacija, po drugi strani, poskrbi za <strong>bolj kislo pija\u010do z izrazitej\u0161im kislim okusom.<\/strong> Zato jo nekateri primerjajo z jabol\u010dnim kisom ali kefirjem. sestava, vklju\u010dno z vsebnostjo vitaminov, lahko razlikuje glede na uporabljene sestavine, dol\u017eino fermentacije in morebitne dodatke (zeli\u0161\u010da, sadje, za\u010dimbe). <mark vsebuje kombu\u010da?<strong><\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Vsebnost kofeina je odvisna od vrste uporabljenega \u010daja, razmerja red\u010denja in dol\u017eine fermentacije (dalj\u0161a kot je fermentacija, manj kofeina ostane).<\/li>\n\n\n\n<li>Ve\u010dina komercialno dostopnih kombu\u010d vsebuje pribli\u017eno <strong>5\u201330 mg kofeina na 240 ml,<\/strong> kar je bistveno manj kot, na primer, skodelica kave (pribli\u017eno 80\u2013100 mg) ali \u010drnega \u010daja (30\u201350 mg). <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup>[15]<\/sup><\/mark><\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Kombu\u010da ima tako nizko vsebnost <a href=\"https:\/\/gymbeam.si\/kofein-90-tabs-gymbeam.html\" target=\"_blank\" rel=\"noreferrer noopener\">kofeina<\/a>, da ga ve\u010dina ljudi sploh ne bo opazila. \u010ce pa ste bolj ob\u010dutljivi na to snov, je bolje, da se kombu\u010di izognete v popoldanskih in ve\u010dernih urah, da kofein ne bi motil va\u0161ega spanca.  <\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Kombu\u010da je funkcionalna pija\u010da, ki vsebuje \u0161irok spekter snovi, ki ji dajejo edinstvene lastnosti. Vendar, kot \u017ee vemo, niso vse kombu\u010de enake. Vsak proizvajalec uporablja razli\u010dne sestavine, doma\u010de kombu\u010de pa imajo popolnoma druga\u010dno sestavo. Zato je u\u010dinke kombu\u010de te\u017eko preu\u010devati. Trenutno imamo omejeno \u0161tevilo visokokakovostnih \u0161tudij, ki bi nedvoumno potrdile koristi kombu\u010de za na\u0161e telo. Kljub temu <strong>strokovnjaki opozarjajo na velik potencial te pija\u010de, predvsem zaradi vsebnosti probioti\u010dnih kultur, polifenolov iz \u010daja in organskih kislin.<\/strong>          <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">1. Te so predvsem posledica polifenolov iz \u010daja in organskih kislin, ki nastajajo med fermentacijo, zlasti glukuronske kisline. <a href=\"https:\/\/gymbeam.si\/green-tea-gymbeam.html\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Polifenoli<\/strong><\/a><strong> nevtralizirajo proste radikale in tako pomagajo \u0161\u010dititi celice pred oksidativnim stresom,<\/strong> ki je povezan s staranjem in razvojem kroni\u010dnih bolezni. Vendar pa se lahko antioksidativna u\u010dinkovitost kombu\u010de mo\u010dno razlikuje glede na vrsto uporabljenega \u010daja, dol\u017eino fermentacije in celotno sestavo.   <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup> [10\u201312]<\/sup><\/mark><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Kombu\u010da, pripravljena iz <\/strong><a href=\"https:\/\/gymbeam.si\/bio-zeleni-caj-sencha-vanavita.html\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>zelenega \u010daja<\/strong><\/a>, obi\u010dajno ka\u017ee <strong>najvi\u0161jo antioksidativno aktivnost<\/strong> v primerjavi s \u010drnim ali oolong \u010dajem. To je zaradi vi\u0161je vsebnosti <strong>katehinov in drugih polifenolov<\/strong> v zelenem \u010daju. Razlog je bil najverjetneje prekomeren vnos organskih kislin, ki lahko obremeni jetra, obstoje\u010da bolezen jeter ali pitje kontaminirane kombu\u010de.
