Mnogi \u010dak prave kombuchu kod ku\u0107e, kako bi u potpunosti iskoristili njezine prednosti.  <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Ovaj fermentirani \u010daj, koji su konzumirali drevni Kinezi, osvaja svijet. U dana\u0161njem \u010dlanku dobit \u0107ete odgovor na pitanje<strong>za\u0161to je kombucha tako popularna<\/strong> i saznati nosi li i kakve rizike.  <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Sto_je_kombucha\"><\/span>\u0160to je kombucha?<strong><\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p><a href=\"https:\/\/gymbeam.hr\/bio-kombucha-gymbeam.html\" target=\"_blank\" rel=\"noreferrer noopener\">Kombucha<\/a> (izgovara se <em>[kom-bu-\u010da]<\/em>) ili kombucha \u010daj je <strong>lagano pjenu\u0161avi fermentirani napitak napravljen od zasla\u0111enog \u010daja,<\/strong> koji je do\u017eivio veliki procvat posljednjih godina. Iako je ovaj napitak tek nedavno stekao globalnu popularnost, njegova povijest se\u017ee do drevne Kine. Tamo je kombucha postala poznata kao <strong> \u201e\u010daj besmrtnosti\u201d<\/strong> ili <strong>\u201eeliksir dugovje\u010dnosti\u201d<\/strong>.   <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Podrijetlo samog naziva kombucha jo\u0161 uvijek je donekle nejasno. No, najvjerojatnija verzija je da dolazi iz japanskog, kombiniraju\u0107i rije\u010di <strong>\u201ekombu\u201d<\/strong> (alga) i <strong>\u201echa\u201d<\/strong> (\u010daj). Kombu-cha je tako izvorno zna\u010dila <strong>\u010daj od algi.<\/strong> Me\u0111utim, kombucha koju poznajemo ima vrlo malo zajedni\u010dkog s ovim imenom. Tako\u0111er se mo\u017ee koristiti bijeli ili oolong \u010daj. Biljni \u010dajevi se ne koriste sami, jer ne sadr\u017ee potrebne tvari za rast mikroorganizama.   <\/li>\n\n\n\n<li><a href=\"https:\/\/gymbeam.hr\/bio-secer-od-trske-gymbeam.html\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>\u0160e\u0107er<\/strong><\/a>: Slu\u017ei kao hrana za kvasce i bakterije tijekom fermentacije. Ve\u0107ina \u0161e\u0107era se preradi, pa kona\u010dni napitak nije previ\u0161e sladak.  <\/li>\n\n\n\n<li><strong>SCOBY<\/strong>: Kratica za <em>Simbiotska kultura bakterija i kvasaca (Symbiotic Culture Of Bacteria and Yeast)<\/em>, koja osigurava sam proces fermentacije.<\/li>\n\n\n\n<li><strong>Starter teku\u0107ina<\/strong>: Obi\u010dno malo gotove kombuche iz prethodne serije ili visokokvalitetna kupljena nepasterizirana kombucha. U stvarnosti, to nije gljiva kao takva. To je <strong>bijelo-sme\u0111a skliska masa s \u017eelatinoznom strukturom<\/strong> koja pluta na povr\u0161ini. Tijekom fermentacije, SCOBY se mo\u017ee mijenjati. Raste u \u0161irinu, debljinu i formira nove slojeve. Stoga je to \u017eivi organizam koji neki ljudi smatraju gotovo ku\u0107nim ljubimcem.      <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>SCOBY kultura se tako\u0111er mo\u017ee \u010duvati kada je ne koristite aktivno za fermentaciju. Na primjer, u staklenci s malo gotove kombuche u hladnjaku. Njezin kona\u010dni okus ovisi o <strong>vrsti kori\u0161tenog \u010daja<\/strong>, duljini fermentacije i dodanim aromama poput vo\u0107a, bilja ili za\u010dina.  <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Kra\u0107om fermentacijom, kombucha je <strong>sla\u0111a i bla\u017ea<\/strong>, dok dulja fermentacija, s druge strane, \u010dini je <strong>kiselijim napitkom s izra\u017eenijim octenim okusom<\/strong>. Zbog toga je neki ljudi uspore\u0111uju s jabu\u010dnim octom ili kefirom.
