Eredetileg csak f\u0151z\u00e9shez kerest\u00e9l valamit, de most habozni kezdesz, hiszen olyan sz\u00e9les a v\u00e1laszt\u00e9k. Ink\u00e1bb az <strong>extra sz\u0171z ol\u00edvaolajat<\/strong>, a klasszikus <strong>repceolajat<\/strong> vagy  <strong> <\/strong>a trendi <strong>avok\u00e1d\u00f3olajat<\/strong> v\u00e1laszd, amir\u0151l mindenki olyan sokat besz\u00e9l?<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>A konyhai zsirad\u00e9k kiv\u00e1laszt\u00e1sa nem csup\u00e1n \u00edzl\u00e9s k\u00e9rd\u00e9se. Egyes olajok <strong>min\u0151s\u00e9ge magasabb h\u0151m\u00e9rs\u00e9kleten megv\u00e1ltozik, vesz\u00edtenek a t\u00e1p\u00e9rt\u00e9k\u00fckb\u0151l<\/strong>, vagy ak\u00e1r <strong>k\u00e1ros anyagok<\/strong> is keletkezhetnek benn\u00fck. Ez\u00e9rt fontos megk\u00fcl\u00f6nb\u00f6ztetni a f\u0151z\u00e9sre \u00e9s a hidegkonyh\u00e1ra alkalmas olajokat. Ebben a cikkben seg\u00edt\u00fcnk eligazodni a zsirad\u00e9kok vil\u00e1g\u00e1ban, hogy legk\u00f6zelebb magabiztosan v\u00e1laszthass a boltban.  <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Miert_fontos_a_megfelelo_zsir_kivalasztasa\"><\/span>Mi\u00e9rt fontos a megfelel\u0151 zs\u00edr kiv\u00e1laszt\u00e1sa?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Az olajok \u00e9s zs\u00edrok a konyh\u00e1nk szerves r\u00e9sz\u00e9t k\u00e9pezik. <strong>S\u00fct\u00e9shez f\u0151z\u00e9shez, <\/strong> \u00e9s <strong>f\u0171szerez\u00e9shez<\/strong> is haszn\u00e1ljuk \u0151ket. A megfelel\u0151 olaj kiv\u00e1laszt\u00e1sa azonban kor\u00e1ntsem mindig egyszer\u0171. A k\u00fcl\u00f6nf\u00e9le t\u00edpusok jelent\u0151sen elt\u00e9rnek egym\u00e1st\u00f3l, \u00e9s egy\u00e1ltal\u00e1n nem mindegy, hogy mikor melyiket haszn\u00e1ljuk.  <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Mivel tulajdons\u00e1gaik \u00e9s szerkezet\u00fck h\u0151 hat\u00e1s\u00e1ra megv\u00e1ltozhat, a megfelel\u0151 t\u00edpus kiv\u00e1laszt\u00e1sa sokkal fontosabb, mint els\u0151re gondoln\u00e1nk. Egyes zs\u00edrok stabilak, \u00e9s jelent\u0151s v\u00e1ltoz\u00e1sok n\u00e9lk\u00fcl b\u00edrj\u00e1k a magas h\u0151m\u00e9rs\u00e9kletet. M\u00e1sok azonban elkezdenek <strong>lebomlani, oxid\u00e1l\u00f3dni<\/strong>, \u00e9s magasabb h\u0151m\u00e9rs\u00e9kleten olyan anyagokat termelnek, amelyek <strong>k\u00e1rosak a szervezet\u00fcnkre<\/strong>. Ha teh\u00e1t azt gondolod, hogy ugyanaz az olaj j\u00f3 lesz sal\u00e1t\u00e1ra \u00e9s a serpeny\u0151be is, lehet, hogy tudtodon k\u00edv\u00fcl ink\u00e1bb \u00e1rtasz vele, mint haszn\u00e1lsz. <sup><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\">[1]<\/mark><\/sup>    <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Az ilyen hib\u00e1k elker\u00fcl\u00e9se \u00e9rdek\u00e9ben \u00e9rdemes ismerni n\u00e9h\u00e1ny alapvet\u0151 szempontot a zsirad\u00e9kok kiv\u00e1laszt\u00e1s\u00e1hoz. Az egyik legfontosabb t\u00e9nyez\u0151 a <strong>zs\u00edrsav\u00f6sszet\u00e9tel<\/strong>, amely meghat\u00e1rozza, mennyire stabil egy adott zs\u00edr meleg\u00edt\u00e9skor. M\u00e1r ezt megel\u0151z\u0151en is olyan k\u00e9miai folyamatok indulnak be, amelyek alapvet\u0151en megv\u00e1ltoztatj\u00e1k az \u00f6sszet\u00e9tel\u00e9t. Amikor az olajat felhev\u00edtj\u00fck, <strong>oxid\u00e1ci\u00f3<\/strong> t\u00f6rt\u00e9nik. Ennek sor\u00e1n <strong>szabad gy\u00f6k\u00f6k, peroxidok<\/strong> \u00e9s m\u00e1s, az eg\u00e9szs\u00e9gre k\u00e1ros vegy\u00fcletek keletkezhetnek. Ezek azt\u00e1n n\u00f6velik az <strong>oxidat\u00edv stressz<\/strong> vagy a <strong>gyullad\u00e1sos reakci\u00f3k<\/strong> kock\u00e1zat\u00e1t a szervezet\u00fcnkben. Ez pedig olyan anyagcsere-betegs\u00e9gek kialakul\u00e1s\u00e1hoz vezethet, mint p\u00e9ld\u00e1ul a 2-es t\u00edpus\u00fa cukorbetegs\u00e9g vagy a zs\u00edrm\u00e1j (steat\u00f3zis).     <strong> <\/strong><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Az oxid\u00e1lt zs\u00edrok n\u00f6velhetik a <a href=\"https:\/\/gymbeam.hu\/blog\/mi-okozhat-magas-vernyomast-es-hogyan-csokkentheto\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>magas v\u00e9rnyom\u00e1s kock\u00e1zat\u00e1t<\/strong><\/a><strong> <\/strong>vagy az <strong>LDL (rossz) <\/strong><a href=\"https:\/\/gymbeam.hu\/blog\/mi-okozza-a-magas-koleszterinszintet-es-hogyan-csokkentheted\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>koleszterinszintet<\/strong><\/a><strong>. <\/strong>Ez el\u0151seg\u00edtheti <strong>\u00e9relmeszesed\u00e9s<\/strong> (az art\u00e9ri\u00e1k megkem\u00e9nyed\u00e9s\u00e9nek) kialakul\u00e1s\u00e1t. Nemcsak <strong>eredet\u00fck, \u00edz\u00fck<\/strong> vagy <strong>\u00e1llaguk<\/strong>, hanem <strong>\u00f6sszet\u00e9tel\u00fck<\/strong> is k\u00fcl\u00f6nb\u00f6zik. Ilyen p\u00e9ld\u00e1ul az <strong>ol\u00edva-, repce-, napraforg\u00f3-, lenmag-, szez\u00e1m-<\/strong> vagy <strong>k\u00f3kuszolaj<\/strong>.  <\/li>\n\n\n\n<li><strong>\u00c1llati zs\u00edrok<\/strong>: ezek \u00e1llatokb\u00f3l sz\u00e1rmaznak, p\u00e9ld\u00e1ul <strong>vaj, gh\u00ed<\/strong> vagy <strong>sert\u00e9szs\u00edr<\/strong>.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Zs\u00edrsavtartalom szerinti feloszt\u00e1s <\/h3>\n\n\n\n<p>A zs\u00edrsavak a zs\u00edrok alapvet\u0151 \u00e9p\u00edt\u0151k\u00f6vei, \u00e9s a k\u00f6vetkez\u0151kre oszlanak:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Tel\u00edtett zs\u00edrsavak (saturated fatty acids &#8211; SFA):<\/strong> ezek <strong>a legstabilabbak f\u0151z\u00e9s k\u00f6zben<\/strong>, de nagyobb mennyis\u00e9gben kock\u00e1zatosak lehetnek a sz\u00edv eg\u00e9szs\u00e9g\u00e9re n\u00e9zve. Forr\u00e1suk f\u0151k\u00e9nt az <strong>\u00e1llati zs\u00edrok<\/strong> \u00e9s n\u00e9h\u00e1ny <strong>tr\u00f3pusi olaj<\/strong> (k\u00f3kuszdi\u00f3, p\u00e1lmamag).  <\/li>\n\n\n\n<li><strong>Egyszeresen tel\u00edtetlen zs\u00edrsavak (monounsaturated fatty acids &#8211; MUFA)<\/strong>: j\u00f3t\u00e9konyan hatnak a sz\u00edv- \u00e9s \u00e9rrendszeri eg\u00e9szs\u00e9gre. Legnagyobb ar\u00e1nyban az<strong> ol\u00edva-, avok\u00e1d\u00f3<\/strong> \u00e9s <strong>repceolajban<\/strong> tal\u00e1lhat\u00f3k.    <\/li>\n\n\n\n<li><strong>T\u00f6bbsz\u00f6r\u00f6sen tel\u00edtetlen zs\u00edrsavak (polyunsaturated fatty acids &#8211; PUFA): <\/strong>ezek k\u00f6z\u00e9 tartoznak a j\u00f3l ismert <a href=\"https:\/\/gymbeam.hu\/blog\/omega-3-zsirsavak-elegendot-fogyasztotok-belole-es-az-omega-6-hoz-ez-megfelelo-aranyban-van\/\" target=\"_blank\" rel=\"noreferrer noopener\">omega-3 <\/a>vagy omega-6 zs\u00edrsavak. Ezek n\u00e9lk\u00fcl\u00f6zhetetlenek az eg\u00e9szs\u00e9g szempontj\u00e1b\u00f3l, de k\u00f6nnyen oxid\u00e1l\u00f3dnak.
