Se per\u00f2 non ti danno fastidio piccoli grumi, puoi anche saltare questo passaggio. Cuoci il riso seguendo le istruzioni sulla confezione e lascialo raffreddare un po\u2019 a parte. Nel frattempo, pulisci lo scalogno e l\u2019aglio e tritali finemente. Taglia il petto di pollo a pezzetti, salalo e pepalo; pulisci i funghi e affettali. Spruzza un po\u2019 d\u2019olio nella padella e fai rosolare lo scalogno fino a doratura. Aggiungi l\u2019aglio e i funghi e cuoci finch\u00e9 diventano morbidi, circa 5 minuti. Infine, unisci il pollo e continua a cuocere per circa 10 minuti, finch\u00e9 sar\u00e0 tenero.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Aggiungiamo il riso cotto al pollo e ai funghi, mescoliamo bene e facciamo insaporire per qualche minuto. Incorporiamo poi il cottage cheese frullato e il formaggio Edam grattugiato. Mescoliamo accuratamente e lasciamo cuocere ancora qualche minuto, fino a ottenere un risotto cremoso e omogeneo. Infine, aggiustiamo di sale e pepe a piacere e serviamo.
