To je <strong>jedan od najpopularnijih zasla\u0111iva\u010da bez kalorija<\/strong> koji se danas koriste za <strong>zasla\u0111ivanje hrane i napitaka.<\/strong> Na\u0107i \u0107ete je prakti\u010dki posvuda &#8211; u \u017evaka\u0107im gumama, slatki\u0161ima, dijetalnim gaziranim napitcima, pa \u010dak i u proizvodima sportske prehrane.<\/p>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n<p>Sukraloza je, kao i druge zamjene za \u0161e\u0107er, vrlo popularna jer ljudima omogu\u0107uje <strong>u\u017eivanje u slatko\u0107i bez nepotrebnih kalorija ili dodanog \u0161e\u0107era.<\/strong> Me\u0111utim, \u010desto postoje izvje\u0161\u0107a koja sugeriraju da biste je trebali izbjegavati jer bi mogla biti \u0161tetna za va\u0161e zdravlje. Dakle, koja je prava pri\u010da? Godine 1976. Shashikant Phadnis, student na Queen&#8217;s Collegeu u Londonu, radio je na istra\u017eiva\u010dkom projektu usmjerenom na bijeli \u0161e\u0107er (saharozu). Tijekom eksperimenta, njegov nadre\u0111eni ga je uputio da testira tvar koju su upravo stvorili. Me\u0111utim, zbog nesporazuma, umjesto da ga isproba (&#8220;testira&#8221;), on ga proba (&#8220;ku\u0161a&#8221;). Na sre\u0107u, nije se dogodilo ni\u0161ta stra\u0161no &#8211; dapa\u010de, upravo suprotno. Zajedno s tvrtkom Johnson &amp; Johnson razvili su<strong> prvi zasla\u0111iva\u010d na bazi sukraloze<\/strong> pod robnom markom <strong>Splenda,<\/strong> koji se pojavio na tr\u017ei\u0161tu 1991. U to je vrijeme sukraloza bila odobrena za upotrebu u hrani u Kanadi. To nije iznena\u0111uju\u0107e jer se <strong>sukraloza zapravo dobiva iz saharoze.<\/strong> Me\u0111utim, postoje zna\u010dajne razlike izme\u0111u ove dvije tvari. Saharoza, poznata kao <strong>obi\u010dni konzumni \u0161e\u0107er,<\/strong> jednostavan je <strong>disaharid<\/strong> (sastavljen od glukoze i fruktoze) koji se razgra\u0111uje u tijelu kako bi nam osigurao <strong>energiju.<\/strong> S druge strane, sukraloza se ne pretvara u kalorije u tijelu &#8211; jednostavno je slatkog okusa. <\/p>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Kako se proizvodi sukraloza?<\/h3>\n\n\n<p>Sukraloza se proizvodi <strong>kemijskom modifikacijom saharoze.<\/strong> To\u010dnije, neke od hidroksilnih skupina (kombinacija kisika i vodika) u molekuli saharoze zamijenjene su <strong>klorom.<\/strong> Takozvano <strong>kloriranje saharoze<\/strong> moglo bi zvu\u010dati alarmantno, ali zapravo uop\u0107e nije opasan proces. Tvar ostaje <strong>sigurna<\/strong> za konzumaciju, s klju\u010dnom razlikom \u0161to se <strong>u tijelu pona\u0161a sasvim druga\u010dije.<\/strong> Za razliku od saharoze, sukraloza se jedva apsorbira u tijelu. Samo oko 16% ukupno unesene koli\u010dine prelazi iz crijeva u krvotok. O ovoj dnevnoj koli\u010dini \u0107emo uskoro vi\u0161e, no za sada je dovoljno re\u0107i da je za njezino prekora\u010denje potrebno popiti nekoliko litara Coca-Cole Zero dnevno. <sup><mark class=\"has-inline-color has-orange-color\">[1,8,11]<\/mark><\/sup><\/p>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n<p>Me\u0111utim, svatko je<strong> druga\u010diji<\/strong>, pa tako i mikrobiom svake osobe. Budu\u0107i da znanstvenici jo\u0161 uvijek istra\u017euju ovo podru\u010dje i na\u0161e razumijevanje nije savr\u0161eno, mogu\u0107e je da bi sukraloza mogla imati negativan utjecaj na sastav mikroorganizama u na\u0161im crijevima. Stoga ju je pametno <strong>konzumirati umjereno. <\/strong><\/p>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">2. Mo\u017ee utjecati na apetit<\/h3>\n\n\n<p>Mnogi od nas koriste sukralozu i druge zasla\u0111iva\u010de kako bi <strong>obuzdali \u017eelju za slatkim<\/strong> i izbjegli nepotrebne <a href=\"https:\/\/gymbeam.hr\/blog\/kako-vas-grickanje-koci-u-gubitku-kilograma-11-jednostavnih-nacina-kako-da-prehranu-drzite-pod-kontrolom\/\" target=\"_blank\" rel=\"noopener\"><strong>snackove<\/strong><\/a>. Oni bude <strong>ugodne osje\u0107aje<\/strong> nakon konzumacije hrane bogate \u0161e\u0107erom i mastima (slatki\u0161i, slane grickalice i sl.). Hrana koja sadr\u017ei zasla\u0111iva\u010de mo\u017ee biti slatka, ali prema nekim znanstvenicima<strong> ne zadovoljava dovoljno na\u0161 mozak jer<\/strong> nema tako sna\u017ean u\u010dinak na centre za nagra\u0111ivanje. To zna\u010di da \u010dak i ako jedete sladoled sa zasla\u0111iva\u010dem, jo\u0161 uvijek mo\u017eete \u017eudjeti za tradicionalnom vrstom. Stoga nije potrebno izbjegavati sukralozu, ali je va\u017eno ne pretjerati s konzumiranjem. Kada u\u0111e u tijelo, kre\u0107e se gotovo <strong>neprimjetno,<\/strong> ostavljaju\u0107i za sobom <strong>minimalne tragove.<\/strong> Zamislite da pijete <a href=\"https:\/\/gymbeam.hr\/blog\/dijetalna-pica-kako-utjecu-na-zdravlje-i-mogu-li-pomoci-pri-mrsavljenju\/\" target=\"_blank\" rel=\"noopener\">napitak zasla\u0111en sukralozom<\/a> &#8211; ta tvar putuje kroz probavni sustav, ali je va\u0161e tijelo <strong>te\u0161ko apsorbira<\/strong>. Na taj na\u010din sukraloza vi\u0161e djeluje kao neuklju\u010deni promatra\u010d nego kao aktivni sudionik u na\u0161em metabolizmu, smanjuju\u0107i svaki rizik od njezinog nakupljanja u tijelu. <sup><mark class=\"has-inline-color has-orange-color\"><span style=\"color: #ff6600;\">[8]<\/span><\/mark><\/sup><\/p>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Je_li_sukraloza_sigurna\"><\/span>Je li sukraloza sigurna?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n<p>Ako brinete o svojoj prehrani, ovo je pitanje koje ste si vjerojatno postavili. \u010cesto \u010ditamo da su sukraloza i drugi zasla\u0111iva\u010di opasni i \u0161tetni, te da ih treba izbjegavati. Na primjer, neko\u0107 se sumnjalo da sukraloza pove\u0107ava rizik od <strong>raka mokra\u0107nog mjehura.<\/strong> Me\u0111utim, to nije potvr\u0111eno, a danas se sukraloza smatra sigurnom. Za sukralozu, to je postavljeno na<strong> 15 mg po kilogramu tjelesne te\u017eine.<\/strong> Prakti\u010dno, to zna\u010di da osoba od 70 kg mo\u017ee sigurno konzumirati 1050 mg sukraloze dnevno. Dosti\u0107i takvu dozu prili\u010dno je te\u0161ko, \u0161to dokazuje i \u010dinjenica da je prosje\u010dni procijenjeni dnevni unos (Estimated Daily Intake &#8211; EDI) znatno ni\u017ei i iznosi<strong> 7\u2013140 mg dnevno.<\/strong> To je 7,5 do 150 puta ni\u017ee od ADI-ja. <sup><mark class=\"has-inline-color has-orange-color\">[4,15]<\/mark><\/sup><\/p>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Je li sukraloza sigurna tijekom trudno\u0107e?<\/h3>\n\n\n<p>Naravno, trudnice posebno paze \u0161to njihova prehrana uklju\u010duje. A budu\u0107i da je sukraloza umjetni zasla\u0111iva\u010d, u po\u010detku bi mogla izazvati zabrinutost. Ipak, nema razloga za brigu. Zabrinutost oko njene sigurnosti i utjecaja na zdravlje javlja se vrlo \u010desto. Na koje mitove i zablude o sukralozi se mo\u017eete susresti?<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">1. Uzrokuje rak<\/h3>\n\n\n<p>Postoji strah da sukraloza mo\u017ee pove\u0107ati rizik od tumora ili \u010dak o\u0161tetiti na\u0161 DNK. Me\u0111utim, istra\u017eivanja <strong>nisu potvrdila<\/strong> te sumnje. Naprotiv, i Europska agencija za sigurnost hrane (European Food Safety Authority <br \/>&#8211; EFSA) i Ameri\u010dka agencija za hranu i lijekove (U.S. Food and Drug Administration &#8211; FDA) su sukralozu smatrali sigurnom za ljudsku prehranu. <sup><mark class=\"has-inline-color has-orange-color\"><span style=\"color: #ff6600;\">[2]<\/span><\/mark><\/sup><\/p>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">2. Opasna je jer sadr\u017ei klor<\/h3>\n\n\n<p>Iako sukraloza sadr\u017ei atome klora, njezina je kemijska struktura stabilna i tijelo je <strong>ne razgra\u0111uje na otrovne spojeve.<\/strong> Klor u sukralozi nije u \u0161tetnom obliku i ne predstavlja zdravstveni rizik ako se konzumira u normalnim koli\u010dinama. <\/p>\n<\/p>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">3. Metabolizira se poput \u0161e\u0107era u tijelu<\/h3>\n\n\n<p>Za razliku od \u0161e\u0107era, sukraloza se <strong>jedva metabolizira u tijelu.<\/strong> Ve\u0107ina sukraloze prolazi kroz probavni sustav nepromijenjena i izlu\u010duje se mokra\u0107om i stolicom. To zna\u010di da ne doprinosi unosu energije, za razliku od \u0161e\u0107era. <\/p>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">4. Podi\u017ee razinu \u0161e\u0107era u krvi<\/h3>\n\n\n<p>Studije su pokazale da sukraloza <strong>ne povisuje razinu glukoze u krvi,<\/strong> niti kod zdravih osoba niti kod dijabeti\u010dara. Stoga se ovaj zasla\u0111iva\u010d smatra sigurnom alternativom \u0161e\u0107eru, \u010dak i za osobe s dijabetesom. <\/p>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">5. Uzrokuje debljanje<\/h3>\n\n\n<p>Istra\u017eivanja na ljudima nisu pokazala da sukraloza izravno uzrokuje debljanje. Naprotiv, \u010desto se koristi kao zamjena za \u0161e\u0107er tijekom <strong>dijeta<\/strong> za smanjenje unosa kalorija. Iako je njena reputacija okru\u017eena mnogim mitovima, studije <strong>nisu potvrdile te sumnje o njenoj sigurnosti.<\/strong> Stoga se sukraloza mo\u017ee smatrati sigurnim zasla\u0111iva\u010dem, odobrenim od strane stru\u010dnih institucija i lako mo\u017ee biti dio va\u0161e prehrane.
