Next, toss in the <strong>finely chopped carrot<\/strong> and cook for another <strong>5 minutes,<\/strong> until the carrot starts to soften.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Now add the <strong>frozen peas, vegetable stock, and bay leaf.<\/strong> Bring it all to a boil, then lower the heat and let it simmer gently until the peas and carrots are fully softened, which should take <strong>around 10 minutes.<\/strong> Remove the bay leaf and blend the soup into a smooth cream using an immersion blender. <strong>Season with <a class=\"ek-link\" href=\"https:\/\/gymbeam.com\/pink-himalayan-salt-fine-gymbeam.html\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">salt<\/a> and <a class=\"ek-link\" href=\"https:\/\/gymbeam.com\/bio-pepper-black-ground-sonnentor.html\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">pepper<\/a>&nbsp;to taste,<\/strong> and just before serving, stir in the chopped mint.
