Ljudi ga \u010desto povezuju s negativnim u\u010dincima kao \u0161to su <strong>debljanje, probavni problemi ili pote\u0161ko\u0107e s koncentracijom.<\/strong> O tim problemima mo\u017eete \u010dak \u010ditati u znanstveno-popularnim knjigama kao \u0161to su <em>Grain Brain<\/em> ili <em>Wheat Belly<\/em>. Ali je li gluten doista \u0161tetan kao \u0161to ga predstavljaju ili je samo jo\u0161 jedan \u017ertveni jarac u svijetu moderne prehrane? Gluten je zapravo op\u0107i naziv za skupinu <strong>bjelan\u010devina<\/strong> koje se sastoje od<strong> prolamina<\/strong> i <strong>glutelina<\/strong>. Ove bjelan\u010devine nisu isklju\u010divo prisutne u<strong> p\u0161enici<\/strong>, premda p\u0161enica \u010desto zauzima sredi\u0161nje mjesto kada se govori o<strong> glutenu.<\/strong> Nalaze se i u drugim \u017eitaricama, gdje prirodno postoje u zrnu i doprinose njegovom rastu i klijanju. Upravo prolamini u glutenu ponajvi\u0161e razlikuju gluten razli\u010ditih \u017eitarica.<mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup><span style=\"color: #ff6600;\">[1]<\/span><\/sup><\/mark><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Prolamini u glutenu raznih \u017eitarica<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Glijadin i glutenin<\/strong> u p\u0161enici<\/li>\n\n\n\n<li><strong>Hordein<\/strong> u je\u010dmu<\/li>\n\n\n\n<li><strong>Sekalin<\/strong> u ra\u017ei<\/li>\n\n\n\n<li><strong>Avenin<\/strong> u zobi<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>U ovom \u010dlanku fokusirat \u0107emo se na gluten koji se nalazi u <strong>p\u0161enici<\/strong>, je\u010dmu i<strong> ra\u017ei<\/strong> \u2013 <strong>\u017eitaricama<\/strong> koje osobe s celijakijom moraju u <strong>potpunosti izbjegavati<\/strong>. <strong>Zob, <\/strong>me\u0111utim, predstavlja poseban slu\u010daj. Ve\u0107ina osoba s celijakijom<strong> dobro podnosi <\/strong>zob, jer avenini, prolamini u glutenu zobi, obi\u010dno ne uzrokuju probleme. To zna\u010di da<strong> zob ne mora nu\u017eno biti isklju\u010dena<\/strong> iz prehrane osoba s celijakijom. Ta kontaminacija mo\u017ee unijeti vrstu glutena koja je \u0161tetna za gotovo sve osobe s celijakijom. Obra\u0111uje se mljevenjem i drugim metodama za proizvodnju bra\u0161na razli\u010dite grubosti, koje se zatim mo\u017ee upotrijebiti za pe\u010denje kruha i drugih pekarskih proizvoda. Otprilike 10 000 godina pr. Kr. \u010dovje\u010danstvo je po\u010delo prelaziti s lova i sakupljanja na uzgoj \u017eitarica sli\u010dnih modernoj p\u0161enici. Za na\u0161e pretke \u017eitarice su bile <strong>stabilan izvor hrane<\/strong> koji je ubrzao razvoj civilizacije. Nau\u010dili su mljeti \u017eitarice u bra\u0161no koje su mogli spremiti i upotrijebiti za izradu raznih lepinja. S vremenom su tako\u0111er otkrili <strong>sposobnost glutena da zarobi mjehuri\u0107e zraka,<\/strong> klju\u010dni \u010dimbenik u dizanju tijesta. Me\u0111utim, istra\u017eivanja pokazuju da se <strong>sadr\u017eaj glutena nije drasti\u010dno promijenio u posljednjih 120 godina.<\/strong> Iako ne znamo sa sigurno\u0161\u0107u \u0161to stoji iza pove\u0107ane osjetljivosti na gluten, vjerojatno je to kombinacija promjena na\u010dina kako se \u017eitarice prera\u0111uju, prehrambenih navika (s vi\u0161e visokoprera\u0111ene hrane u na\u0161oj prehrani) i \u010dimbenika na\u010dina \u017eivota. Iako naziv mo\u017ee poduprijeti tu ideju, sre\u0107om, <strong>ljudski probavni sustav mo\u017ee sasvim dobro podnijeti gluten.<\/strong> Zdrave osobe imaju enzime koji mogu gotovo u potpunosti razgraditi gluten na jednostavnije, probavljivije komponente. Taj proces po\u010dinje s enzimom pepsinom u \u017eelucu i nastavlja se s enzimima gu\u0161tera\u010de (proteazama) u tankom crijevu. Rezultat su jednostavne aminokiseline koje ulaze u krvotok i koje tijelo upotrebljava ondje gdje je potrebno. <strong>Jedna komponenta glutena, glijadin, ne mo\u017ee se u potpunosti razgraditi.<\/strong> Ostaje u tankom crijevu i na kraju se izlu\u010duje.
