negat\u00edvne \u00fa\u010dinky spojen\u00e9 s <strong>priberan\u00edm, za\u017e\u00edvac\u00edmi probl\u00e9mami<\/strong> alebo <strong>zhor\u0161enou schopnos\u0165ou sa s\u00fastredi\u0165.<\/strong> Dokonca si o tom m\u00f4\u017eeme pre\u010d\u00edta\u0165 aj v popul\u00e1rno n\u00e1u\u010dn\u00fdch knih\u00e1ch, ako je M\u00fa\u010dny mozog alebo \u017divot bez p\u0161enice. Je to s tou \u0161kodlivos\u0165ou lepku naozaj tak\u00e9 v\u00e1\u017ene, alebo ide len o \u010fal\u0161ieho obetn\u00e9ho bar\u00e1nka modernej v\u00fd\u017eivy? Nach\u00e1dza sa v \u0148om najviac energie a tvor\u00ed z\u00e1kladn\u00fa zlo\u017eku pri v\u00fdrobe bielej m\u00faky.<\/li>\n\n\n\n<li><strong>Lepok (glut\u00e9n):<\/strong> P\u0161eni\u010dn\u00e1 bielkovina, ktor\u00e1 sa nach\u00e1dza v endosperme. Tvor\u00ed ho gliad\u00edn a gluten\u00edn, ktor\u00e9 dod\u00e1vaj\u00fa cestu pru\u017enos\u0165 a nad\u00fdchan\u00fa \u0161trukt\u00faru.<\/li>\n\n\n\n<li><strong>Otruby:<\/strong> Vonkaj\u0161ia vrstva zrna, ktor\u00e1 je bohat\u00e1 predov\u0161etk\u00fdm na vl\u00e1kninu, vitam\u00edny a miner\u00e1lne l\u00e1tky. Z obiln\u00edn sa nau\u010dili mlie\u0165 m\u00faku, ktor\u00fa uchov\u00e1vali, robili z nej r\u00f4zne placky a \u010dasom objavili aj <strong>schopnos\u0165 lepku zadr\u017eiava\u0165 vzduchov\u00e9 bubliny,<\/strong> \u010do je k\u013e\u00fa\u010dov\u00e9 pre kysnutie.
