Predsa len m\u00e1 pom\u00f4c\u0165 budova\u0165 svaly. Ak\u00e9 <strong>benefity <\/strong>n\u00e1m srv\u00e1tkov\u00fd prote\u00edn m\u00f4\u017ee prinies\u0165 a pre\u010do \u010di ako ho <strong>vyu\u017e\u00edva\u0165<\/strong>? Na tieto ot\u00e1zky a mnoho \u010fal\u0161\u00edch v\u00e1m odpovieme v tomto \u010dl\u00e1nku. V podstate by sme bez samotnej srv\u00e1tky nikdy srv\u00e1tkov\u00fd prote\u00edn nevyrobili. Ak\u00e9 s\u00fa medzi nimi teda tie hlavn\u00e9 <strong>rozdiely <\/strong>a ako sa srv\u00e1tkov\u00fd prote\u00edn vyr\u00e1ba?<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">\u010co je to srv\u00e1tka?<\/h3>\n\n\n\n<p><strong>Srv\u00e1tka <\/strong>be\u017ene vznik\u00e1 ako <strong>ved\u013eaj\u0161\u00ed produkt <\/strong>pri v\u00fdrobe syra. Cel\u00e9 sa to za\u010d\u00edna t\u00fdm, \u017ee sa do <strong>mlieka<\/strong> prid\u00e1 \u0161peci\u00e1lny <strong>enz\u00fdm <\/strong>zvan\u00fd chymoz\u00edn (syridlo). Tento enz\u00fdm sp\u00f4sob\u00ed, \u017ee sa mlie\u010dne bielkoviny (<a class=\"ek-link\" href=\"https:\/\/gymbeam.sk\/blog\/kazein-a-kazeinove-proteiny\/\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">kaze\u00ednov\u00e9<\/a> \u2013 tie sa niekedy vyu\u017e\u00edvaj\u00fa na v\u00fdrobu <a class=\"ek-link\" href=\"https:\/\/gymbeam.sk\/28-nocne-proteiny\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">no\u010dn\u00fdch kaze\u00ednov\u00fdch prote\u00ednov<\/a>) zrazia a mlieko sa rozdel\u00ed na dve \u010dasti. Z\u00edskame tak tekut\u00fa <strong>srv\u00e1tku <\/strong>a pevn\u00fa syreninu, z ktorej sa vyr\u00e1ba syr. Srv\u00e1tka m\u00e1 svetlo \u017elt\u00fa farbu a je zhruba z <strong>94 %<\/strong> tvoren\u00e1 <strong>vodou<\/strong>. Aby dlh\u0161ie vydr\u017eala a lep\u0161ie sa skladovala, \u010dasto sa <strong>su\u0161\u00ed na pr\u00e1\u0161ok<\/strong>.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Vzh\u013eadom na to, \u017ee hlavn\u00fdm produktom v\u00fdroby bol syr a in\u00e9 mlie\u010dne v\u00fdrobky, srv\u00e1tka bola \u010dasto pova\u017eovan\u00e1 za <strong>odpad<\/strong>. Nebolo pre \u0148u toti\u017e zmyslupln\u00e9 vyu\u017eitie, a tak <strong>\u010dasto kon\u010dila <\/strong>v stok\u00e1ch \u010di kanaliz\u00e1ci\u00e1ch. To sa na\u0161\u0165astie \u010dasom zmenilo. Srv\u00e1tku ste u\u017e ur\u010dite niekedy zaznamenali. Sta\u010d\u00ed toti\u017e otvori\u0165<strong>&nbsp;jogurt a tekutina na povrchu<\/strong> je pr\u00e1ve srv\u00e1tka. Nem\u00e1 zmysel ju vylieva\u0165, ale ide\u00e1lne je <strong>vmie\u0161a\u0165 ju sp\u00e4\u0165 a vychutna\u0165 si pln\u00fa chu\u0165 jogurtu<\/strong>. S\u00edce obsahuje ve\u013emi <strong>kvalitn\u00e9 bielkoviny<\/strong>, s ich podielom u\u017e to tak\u00e9 vesel\u00e9 nie je, a preto sa n\u00fakala ot\u00e1zka, ako to vyu\u017ei\u0165.<mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup>[1,2]<\/sup><\/mark><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">\u010co je to srv\u00e1tkov\u00fd prote\u00edn?<\/h3>\n\n\n\n<p>Ako sme si u\u017e povedali, srv\u00e1tka bola v minulosti pova\u017eovan\u00e1 za odpad a nevedelo sa, \u010do s \u0148ou. \u010casto tak bola vyp\u00fa\u0161\u0165an\u00e1 aj do riek, jazier a \u010fal\u0161\u00edch vodn\u00fdch tokov, \u010do so sebou nieslo aj <strong>ekologick\u00fa z\u00e1\u0165a\u017e<\/strong>. Men\u0161ia \u010das\u0165 sa ale pou\u017e\u00edvala aj ako <strong>krmivo pre hospod\u00e1rske zvierat\u00e1<\/strong>.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>S n\u00e1stupom \u010doraz <strong>nov\u0161\u00edch technol\u00f3gi\u00ed <\/strong>prich\u00e1dzali aj prv\u00e9 n\u00e1pady, ako z nej vy\u0165a\u017ei\u0165 to najlep\u0161ie a vytvori\u0165 tak cenn\u00fa a v\u00fd\u017eivovo bohat\u0161iu surovinu. Z tekutej srv\u00e1tky sa tak pomocou <strong>r\u00f4znych met\u00f3d <\/strong>(od jednoduchej koncentr\u00e1cie a su\u0161enia, iontovej v\u00fdmeny a\u017e po modern\u00e9 filtra\u010dn\u00e9 met\u00f3dy) postupne za\u010dali vyr\u00e1ba\u0165 <a aria-label=\" (opens in a new tab)\" href=\"https:\/\/gymbeam.sk\/srvatkovy-whey-protein\" target=\"_blank\" rel=\"noreferrer noopener\" class=\"ek-link\"><strong>koncentrovan\u00e9 srv\u00e1tkov\u00e9 prote\u00edny<\/strong><\/a> s obsahom bielkov\u00edn v rozsahu pribli\u017ene <strong>20 a\u017e 89 %<\/strong>, \u010do bolo typick\u00e9 pre <a aria-label=\" (opens in a new tab)\" href=\"https:\/\/gymbeam.sk\/proteinove-koncentraty\" target=\"_blank\" rel=\"noreferrer noopener\" class=\"ek-link\"><strong>srv\u00e1tkov\u00e9 koncentr\u00e1ty<\/strong><\/a><strong> (WPC \u2013 Whey Protein Concentrate)<\/strong>. Tam sa do neho prid\u00e1 <strong>syridlo <\/strong>a mlieko sa rozdel\u00ed na <strong>tekut\u00fa srv\u00e1tku <\/strong>a pevn\u00fa \u010das\u0165. Ne\u017e sa zo srv\u00e1tky stane napr\u00edklad ob\u013e\u00faben\u00fd \u010dokol\u00e1dov\u00fd prote\u00edn, mus\u00ed prejs\u0165 e\u0161te <strong>nieko\u013ek\u00fdmi krokmi<\/strong>. Srv\u00e1tkov\u00e9 bielkoviny sa oddelia, skoncentruj\u00fa a usu\u0161ia. N\u00e1sledne sa pridaj\u00fa ar\u00f3my, sladidl\u00e1 \u010di in\u00e9 ochucovadl\u00e1 a \u010fal\u0161ie pomocn\u00e9 l\u00e1tky. Len \u010fal\u0161\u00edmi technologick\u00fdmi \u00fapravami sa z neho z\u00edska prote\u00ednov\u00fd pr\u00e1\u0161ok, ktor\u00fd mo\u017eno st\u00e1le vzbudzuje hr\u00f4zu v o\u010diach mnoh\u00fdch rodi\u010dov. Mo\u017eno ste sa niekedy u\u017e tie\u017e zamysleli nad t\u00fdm, kedy do\u0161lo k tomuto boomu a \u010do ho sp\u00f4sobilo a \u010di to nie je len nejak\u00fd novodob\u00fd v\u00fdmysel \u010di prehajpovan\u00fd produkt. Konkr\u00e9tne \u0161lo o n\u00e1lezy st\u00f4p mlieka v sk\u00faman\u00fdch n\u00e1dob\u00e1ch z Po\u013eska.<mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup>[3]<\/sup><\/mark><\/li>\n\n\n\n<li>Samotn\u00e1 srv\u00e1tka bola objaven\u00e1 asi <strong>pred 3 000 rokmi<\/strong>, ke\u010f bola zaznamenan\u00e1 pri preprave mlieka v \u017eal\u00fadkoch teliat. Tie sa toti\u017e v t\u00fdch \u010dasoch pou\u017e\u00edvali ako vaky na jeho uchov\u00e1vanie a prepravu. V\u010faka prirodzen\u00e9mu v\u00fdskytu enz\u00fdmu chymoz\u00ednu v t\u00fdchto vakoch na mlieko tak pri transporte do\u0161lo k vyzr\u00e1\u017eaniu bielkov\u00edn.<mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup>[2]<\/sup><\/mark><\/li>\n\n\n\n<li><strong>U\u017e Hippokrates <\/strong>srv\u00e1tku dokonca predpisoval svojim pacientom na nabudenie imunitn\u00e9ho syst\u00e9mu.
