Mo\u017en\u00e1 jste dokonce <strong>syrov\u00e1tku <\/strong>u\u017e n\u011bkdy v minulosti sami vyzkou\u0161eli a pot\u00e9, co jste se ned\u00e1vno pustili do cvi\u010den\u00ed, jste si na ni op\u011bt vzpomn\u011bli. P\u0159eci jenom m\u00e1 pomoci budovat svaly. Jak\u00fd je v\u0161ak mezi <strong>syrov\u00e1tkou a syrov\u00e1tkov\u00fdm proteinem<\/strong> rozd\u00edl? Maj\u00ed stejn\u00e9 vlastnosti a <strong>nutri\u010dn\u00ed hodnoty<\/strong>? Jak\u00e9 <strong>benefity <\/strong>n\u00e1m syrov\u00e1tkov\u00fd protein m\u016f\u017ee p\u0159in\u00e9st a pro\u010d \u010di jak ho <strong>vyu\u017e\u00edvat<\/strong>? Na tyto ot\u00e1zky a mnoho dal\u0161\u00edch v\u00e1m odpov\u00edme v tomto \u010dl\u00e1nku. V podstat\u011b bychom bez samotn\u00e9 syrov\u00e1tky nikdy syrov\u00e1tkov\u00fd protein nevyrobili. Jak\u00e9 jsou mezi nimi tedy ty hlavn\u00ed <strong>rozd\u00edly <\/strong>a jak se syrov\u00e1tkov\u00fd protein vyr\u00e1b\u00ed?<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Co je to syrov\u00e1tka?<\/h3>\n\n\n\n<p><strong>Syrov\u00e1tka <\/strong>b\u011b\u017en\u011b vznik\u00e1 jako <strong>vedlej\u0161\u00ed produkt <\/strong>p\u0159i v\u00fdrob\u011b s\u00fdra. Cel\u00e9 to za\u010d\u00edn\u00e1 t\u00edm, \u017ee se do <strong>ml\u00e9ka<\/strong> p\u0159id\u00e1 speci\u00e1ln\u00ed <strong>enzym <\/strong>zvan\u00fd chymosin (sy\u0159idlo). Tento enzym zp\u016fsob\u00ed, \u017ee se ml\u00e9\u010dn\u00e9 b\u00edlkoviny (<a href=\"https:\/\/gymbeam.ba\/blog\/kasein-kaseinove-proteiny-a-vse-co-o-nich-potrebujete-vedet\/\" target=\"_blank\" rel=\"noreferrer noopener\">kaseinov\u00e9<\/a> \u2013 ty se n\u011bkdy vyu\u017e\u00edvaj\u00ed pro v\u00fdrobu <a aria-label=\" (opens in a new tab)\" class=\"ek-link\" href=\"https:\/\/gymbeam.cz\/nocni-proteiny\" target=\"_blank\" rel=\"noreferrer noopener\">no\u010dn\u00edch kaseinov\u00fdch protein\u016f<\/a>) sraz\u00ed a ml\u00e9ko se rozd\u011bl\u00ed na dv\u011b \u010d\u00e1sti. Z\u00edsk\u00e1me tak tekutou <strong>syrov\u00e1tku <\/strong>a pevnou s\u00fd\u0159eninu, ze kter\u00e9 se vyr\u00e1b\u00ed s\u00fdr. Syrov\u00e1tka m\u00e1 pak sv\u011btle \u017elutou barvu a je zhruba z <strong>94 %<\/strong> tvo\u0159ena <strong>vodou<\/strong>. Aby d\u00e9le vydr\u017eela a l\u00e9pe se skladovala, \u010dasto se <strong>su\u0161\u00ed na pr\u00e1\u0161ek<\/strong>.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Vzhledem k tomu, \u017ee hlavn\u00edm produktem v\u00fdroby byl s\u00fdr a jin\u00e9 ml\u00e9\u010dn\u00e9 produkty, byla syrov\u00e1tka \u010dasto pova\u017eov\u00e1na za <strong>odpad<\/strong>. Nebylo pro ni toti\u017e smyslupln\u00e9 vyu\u017eit\u00ed, a tak <strong>\u010dasto kon\u010dila <\/strong>ve stok\u00e1ch \u010di kanalizac\u00edch. To se na\u0161t\u011bst\u00ed \u010dasem zm\u011bnilo. Syrov\u00e1tku jste u\u017e ur\u010dit\u011b n\u011bkdy zaznamenali. Sta\u010d\u00ed toti\u017e otev\u0159\u00edt<strong> jogurt a tekutina na povrchu<\/strong> je pr\u00e1v\u011b syrov\u00e1tka. Nem\u00e1 smysl ji vyl\u00e9vat, ale ide\u00e1ln\u011b <strong>zam\u00edchat a vychutnat si plnou chu\u0165 jogurtu<\/strong>. Sice obsahuje velmi <strong>kvalitn\u00ed b\u00edlkoviny<\/strong>, s jejich pod\u00edlem u\u017e to tak vesel\u00e9 nen\u00ed, a proto se nab\u00edzela ot\u00e1zka, jak toho vyu\u017e\u00edt? <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup>[1,2]<\/sup><\/mark><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Co je to syrov\u00e1tkov\u00fd protein?<\/h3>\n\n\n\n<p>Jak jsme si ji\u017e \u0159ekli, syrov\u00e1tka byla v minulosti pova\u017eov\u00e1na za odpad a nev\u011bd\u011blo se, co s n\u00ed. \u010casto tak byla vypou\u0161t\u011bna i do \u0159ek, jezer a dal\u0161\u00edch vodn\u00edch tok\u016f, co\u017e s sebou neslo i <strong>ekologickou z\u00e1t\u011b\u017e<\/strong>. Men\u0161\u00ed \u010d\u00e1st se ale pou\u017e\u00edvala i jako <strong>krmivo pro hospod\u00e1\u0159sk\u00e1 zv\u00ed\u0159ata.<\/strong><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>S n\u00e1stupem st\u00e1le <strong>nov\u011bj\u0161\u00edch technologi\u00ed <\/strong>p\u0159ich\u00e1zely i prvn\u00ed n\u00e1pady, jak z n\u00ed vyt\u011b\u017eit to nejlep\u0161\u00ed, a vytvo\u0159it tak cennou a v\u00fd\u017eivov\u011b bohat\u0161\u00ed surovinu. Z tekut\u00e9 syrov\u00e1tky se tak pomoc\u00ed <strong>r\u016fzn\u00fdch metod <\/strong>(od pouh\u00e9 koncentrace a su\u0161en\u00ed, iontov\u00e9 v\u00fdm\u011bny a\u017e po modern\u00ed filtra\u010dn\u00ed metody) za\u010daly postupn\u011b vyr\u00e1b\u011bt <a href=\"https:\/\/gymbeam.cz\/syrovatkovy-whey-protein\" target=\"_blank\" aria-label=\" (opens in a new tab)\" rel=\"noreferrer noopener\" class=\"ek-link\"><strong>koncentrovan\u00e9 syrov\u00e1tkov\u00e9 proteiny<\/strong><\/a> s obsahem b\u00edlkovin v rozsahu p\u0159ibli\u017en\u011b <strong>20\u201389 %,<\/strong> co\u017e bylo typick\u00e9 pro <a href=\"https:\/\/gymbeam.cz\/proteinove-koncentraty\" target=\"_blank\" aria-label=\" (opens in a new tab)\" rel=\"noreferrer noopener\" class=\"ek-link\"><strong>syrov\u00e1tkov\u00e9 koncentr\u00e1ty<\/strong><\/a><strong> (WPC \u2013 Whey Protein Concentrate)<\/strong>. V modern\u00ed dob\u011b jsme d\u00edky vyu\u017eit\u00ed filtra\u010dn\u00edch metod schopni z\u00edskat protein s a\u017e <strong>90% pod\u00edlem b\u00edlkovin, <\/strong>co\u017e je b\u011b\u017en\u00e9 pro <a href=\"https:\/\/gymbeam.cz\/proteinove-izolaty\" target=\"_blank\" aria-label=\" (opens in a new tab)\" rel=\"noreferrer noopener\" class=\"ek-link\"><strong>syrov\u00e1tkov\u00e9 izol\u00e1ty<\/strong><\/a><strong> (WPI \u2013 Whey Protein Isolate)<\/strong>. <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup>[2,17]<\/sup><\/mark><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">Jak se vyr\u00e1b\u00ed syrov\u00e1tkov\u00fd protein?<\/h4>\n\n\n\n<p>Cesta <strong>syrov\u00e1tkov\u00e9ho proteinu <\/strong>za\u010d\u00edn\u00e1 na ml\u00e9\u010dn\u00e9 farm\u011b, kde se ml\u00e9ko nadoj\u00ed a putuje do zpracovatelsk\u00e9ho z\u00e1vodu. Tam se do n\u011bj p\u0159id\u00e1 <strong>sy\u0159idlo <\/strong>a ml\u00e9ko se rozd\u011bl\u00ed na <strong>tekutou syrov\u00e1tku <\/strong>a pevnou \u010d\u00e1st. Ne\u017e se ze syrov\u00e1tky stane nap\u0159\u00edklad obl\u00edben\u00fd \u010dokol\u00e1dov\u00fd protein, mus\u00ed proj\u00edt je\u0161t\u011b <strong>n\u011bkolika kroky<\/strong>. Syrov\u00e1tkov\u00e9 b\u00edlkoviny se odd\u011bl\u00ed, zkoncentruj\u00ed a usu\u0161\u00ed. N\u00e1sledn\u011b se p\u0159idaj\u00ed aromata, sladidla \u010di jin\u00e1 ochucovadla a dal\u0161\u00ed pomocn\u00e9 l\u00e1tky. Pouze dal\u0161\u00edmi technologick\u00fdmi \u00fapravami se z n\u011bj z\u00edsk\u00e1 proteinov\u00fd pr\u00e1\u0161ek, kter\u00fd mo\u017en\u00e1 st\u00e1le vzbuzuje hr\u016fzu v o\u010d\u00edch \u0159ady rodi\u010d\u016f. V \u017e\u00e1dn\u00e9m p\u0159\u00edpad\u011b <strong>se tak nejedn\u00e1 o steroid nebo jinou zak\u00e1zanou l\u00e1tku.<\/strong><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Zpatky_do_minulosti\"><\/span>Zp\u00e1tky do minulosti<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>V modern\u00edm sv\u011bt\u011b<strong> <\/strong><a href=\"https:\/\/gymbeam.cz\/sportovni-vyziva\" target=\"_blank\" aria-label=\" (opens in a new tab)\" rel=\"noreferrer noopener\" class=\"ek-link\"><strong>sportovn\u00ed v\u00fd\u017eivy<\/strong><\/a> se syrov\u00e1tkov\u00fd protein stal jedn\u00edm z nejpopul\u00e1rn\u011bj\u0161\u00edch a nejprostudovan\u011bj\u0161\u00edch <strong>dopl\u0148k\u016f stravy<\/strong>, kter\u00fd pou\u017e\u00edvaj\u00ed sportovci a aktivn\u00ed lid\u00e9 po cel\u00e9m sv\u011bt\u011b. Mo\u017en\u00e1 jste se n\u011bkdy u\u017e tak\u00e9 zamysleli nad t\u00edm, kdy a co ten boom zp\u016fsobilo a jestli to nen\u00ed jen n\u011bjak\u00fd novodob\u00fd v\u00fdmysl \u010di p\u0159ehypovan\u00fd produkt. Poj\u010fme se pod\u00edvat, co n\u00e1m odhal\u00ed historie.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Syrov\u00e1tka<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Prvn\u00ed dochovan\u00e9 zm\u00ednky o zpracov\u00e1n\u00ed ml\u00e9ka poch\u00e1z\u00ed ji\u017e z doby <strong>p\u0159ed <\/strong>zhruba <strong>7 000 lety. <\/strong>Konkr\u00e9tn\u011b se jednalo o n\u00e1lezy stop ml\u00e9ka ve zkouman\u00fdch n\u00e1dob\u00e1ch z Polska. <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup>[3]<\/sup><\/mark><\/li>\n\n\n\n<li>Samotn\u00e1 syrov\u00e1tka pak byla objevena asi <strong>p\u0159ed 3 000 lety<\/strong>, kdy byla zaznamen\u00e1na p\u0159i p\u0159eprav\u011b ml\u00e9ka v \u017ealudc\u00edch telat. Ty se toti\u017e v t\u00e9 dob\u011b pou\u017e\u00edvaly jako vaky pro jeho uchov\u00e1v\u00e1n\u00ed a p\u0159epravu.
