Lid\u00e9 mu \u010dasto p\u0159isuzuj\u00ed negativn\u00ed \u00fa\u010dinky spojen\u00e9 s <strong>p\u0159ib\u00edr\u00e1n\u00edm, za\u017e\u00edvac\u00edmi probl\u00e9my<\/strong> nebo <strong>zhor\u0161enou schopnost\u00ed se soust\u0159edit.<\/strong> Dokonce si o tom m\u016f\u017eeme p\u0159e\u010d\u00edst i v popul\u00e1rn\u011b nau\u010dn\u00fdch knih\u00e1ch, jako je Mou\u010dn\u00fd mozek nebo \u017divot bez p\u0161enice. Je to s tou \u0161kodlivost\u00ed lepku opravdu tak v\u00e1\u017en\u00e9, nebo se jedn\u00e1 jen o dal\u0161\u00edho ob\u011btn\u00edho ber\u00e1nka modern\u00ed v\u00fd\u017eivy? Poj\u010fme se spole\u010dn\u011b pod\u00edvat na sou\u010dasn\u00e9 poznatky o lepku a jeho vlivu na zdrav\u00ed \u010dlov\u011bka.&nbsp;<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Co_je_lepek\"><\/span>Co je lepek?<strong><\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Mnoho lid\u00ed si mysl\u00ed, \u017ee <strong>lepek <\/strong>je jen jeden, co\u017e nen\u00ed \u00fapln\u011b pravda. Je to sp\u00ed\u0161 v\u0161eobecn\u00fd n\u00e1zev pro skupinu<strong> b\u00edlkovin,<\/strong> slo\u017een\u00fd z tzv. <strong>prolamin\u016f <\/strong>a <strong>glutel\u00edn\u016f. <\/strong>Nejsou jen v\u00fdsadou <strong>p\u0161enice, <\/strong>d\u00edky kter\u00e9 stoj\u00ed v z\u00e1\u0159i reflektor\u016f, ale i <strong>ostatn\u00edch obilovin. <\/strong>P\u0159irozen\u011b se nach\u00e1z\u00ed v obiln\u00e9m zrnu a pod\u00edlej\u00ed se na jeho r\u016fstu a kl\u00ed\u010den\u00ed. Pr\u00e1v\u011b prolaminy jsou p\u0159itom ty slo\u017eky, kter\u00e9 od sebe nejv\u00edc odli\u0161uj\u00ed lepek jednotliv\u00fdch druh\u016f.<mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup>[1]<\/sup><\/mark><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Prolaminy v lepku jednotliv\u00fdch druh\u016f obilovin<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>gliadin a glutenin<\/strong> v p\u0161enici<\/li>\n\n\n\n<li><strong>hordein<\/strong> v je\u010dmeni&nbsp;<\/li>\n\n\n\n<li><strong>sekalin <\/strong>v \u017eitu<\/li>\n\n\n\n<li><strong>avenin<\/strong> v ovsu<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>V \u010dl\u00e1nku se budeme v\u011bnovat zejm\u00e9na lepku, kter\u00fd najdeme v <strong>p\u0161enici, je\u010dmeni<\/strong> a<strong> \u017eitu. <\/strong>Pr\u00e1v\u011b t\u011bmto obilovin\u00e1m se toti\u017e celiaci mus\u00ed <strong>\u00fapln\u011b vyh\u00fdbat.<\/strong> <strong>Oves <\/strong>je v tomto sm\u011bru specifick\u00fd, proto\u017ee v\u011bt\u0161ina lid\u00ed s celiaki\u00ed ho<strong> toleruje dob\u0159e.<\/strong> Aveniny v lepku ovsa toti\u017e v\u011bt\u0161inou nezp\u016fsobuj\u00ed probl\u00e9my a celiaci ho tak z j\u00eddeln\u00ed\u010dku <strong>nemus\u00ed vy\u0159azovat. <\/strong>P\u0159esto je v\u0161ak podstatn\u00e9 <strong>m\u00edt se na pozoru,<\/strong> proto\u017ee se najdou i v\u00fdjimky, pro kter\u00e9 je i oves nevhodn\u00fd.<mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\"><sup>[2]<\/sup><\/mark><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Dal\u0161\u00ed zaj\u00edmavost\u00ed ovse je, \u017ee b\u011bhem v\u00fdroby b\u00fdv\u00e1 \u010dasto <strong>kontaminovan\u00fd jin\u00fdmi obilovinami.<\/strong> Tak se do n\u011bho m\u016f\u017ee dostat pr\u00e1v\u011b ten lepek, kter\u00fd \u0161kod\u00ed prakticky v\u0161em celiak\u016fm. Pokud se tomu pot\u0159ebujeme vyhnout, je na m\u00edst\u011b s\u00e1hnout po ovsi, kter\u00fd je ozna\u010den\u00fd jako <strong>&#8220;bez lepku&#8221;, <\/strong>nap\u0159\u00edklad ve form\u011b <a href=\"https:\/\/gymbeam.cz\/bezlepkove-ovesne-vlocky-jemne-gymbeam.html\" target=\"_blank\" aria-label=\" (opens in a new tab)\" rel=\"noreferrer noopener\" class=\"ek-link\">bezlepkov\u00fdch ovesn\u00fdch vlo\u010dek<\/a>. To se mlet\u00edm a dal\u0161\u00edmi postupy zpracov\u00e1v\u00e1 na mouku s r\u016fznou hrubost\u00ed, ze kter\u00e9 si m\u016f\u017eeme up\u00e9ct chleba a jin\u00e9 peka\u0159sk\u00e9 v\u00fdrobky. Jednotliv\u00e9 \u010d\u00e1sti zrna maj\u00ed r\u016fzn\u00e9 vlastnosti, kter\u00e9 maj\u00ed vliv na v\u00fdsledn\u00fd produkt.&nbsp;<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Endosperm (j\u00e1dro):<\/strong> Nejv\u011bt\u0161\u00ed \u010d\u00e1st zrna, kter\u00e1 obsahuje \u0161kroby (sacharidy) a b\u00edlkoviny. Nach\u00e1z\u00ed se v n\u011bm nejv\u00edce energie a tvo\u0159\u00ed z\u00e1kladn\u00ed slo\u017eku p\u0159i v\u00fdrob\u011b b\u00edl\u00e9 mouky.<\/li>\n\n\n\n<li><strong>Lepek (gluten):<\/strong> P\u0161eni\u010dn\u00e1 b\u00edlkovina, kter\u00e1 se nach\u00e1z\u00ed v endospermu. Tvo\u0159\u00ed ho gliadin a glutenin, kter\u00e9 dod\u00e1vaj\u00ed t\u011bstu pru\u017enost a nad\u00fdchanou strukturu.&nbsp;<\/li>\n\n\n\n<li><strong>Otruby:<\/strong> Vn\u011bj\u0161\u00ed vrstva zrna, kter\u00e1 je bohat\u00e1 p\u0159edev\u0161\u00edm na vl\u00e1kninu, vitam\u00edny a miner\u00e1ln\u00ed l\u00e1tky. Od lovc\u016f a sb\u011bra\u010d\u016f jsme se za\u010dali zhruba p\u0159ed 10 000 lety p\u0159ed na\u0161im letopo\u010dtem orientovat na p\u011bstov\u00e1n\u00ed obil\u00ed p\u0159\u00edbuzn\u00e9mu dne\u0161n\u00ed p\u0161enici. Pro na\u0161e p\u0159edky p\u0159edstavovala <strong>stabiln\u00ed zdroj potravy,<\/strong> kter\u00e1 byla akcelerovala rozvoj civilizace. Z obilovin se nau\u010dili ml\u00edt mouku, kterou uchov\u00e1vali, d\u011blali z n\u00ed r\u016fzn\u00e9 placky a \u010dasem objevili tak\u00e9 <strong>schopnost lepku zadr\u017eovat vzduchov\u00e9 bubliny,<\/strong> co\u017e je kl\u00ed\u010dov\u00e9 pro kynut\u00ed. Nav\u00edc <strong>d\u00e1vky lepku ve studii odpov\u00eddaly p\u0159ibli\u017en\u011b 20 kraj\u00edc\u016fm chleba denn\u011b, <\/strong>co\u017e je mnohem v\u011bt\u0161\u00ed mno\u017estv\u00ed, ne\u017e lid\u00e9 b\u011b\u017en\u011b sn\u011bd\u00ed. Souvislost mezi lepkem a hmotnost\u00ed \u010dlov\u011bka tak zat\u00edm z\u016fst\u00e1v\u00e1 velkou nezn\u00e1mou.
