Ide toti\u017e o <strong>jedno z najpopul\u00e1rnej\u0161\u00edch bezkalorick\u00fdch sladidiel<\/strong>, ktor\u00e9 sa dnes be\u017ene pou\u017e\u00edva na <strong>sladenie potrav\u00edn a n\u00e1pojov.<\/strong> N\u00e1jdete ju prakticky v\u0161ade \u2013 v \u017euva\u010dk\u00e1ch, cukrovink\u00e1ch, ZERO limon\u00e1dach a dokonca aj v \u0161portovej v\u00fd\u017eive.&nbsp;<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Sukral\u00f3za, rovnako ako \u010fal\u0161ie n\u00e1hrady cukru, je pomerne ob\u013e\u00faben\u00e1, ke\u010f\u017ee n\u00e1m d\u00e1va mo\u017enos\u0165 <strong>osladi\u0165 si \u017eivot bez zbyto\u010dn\u00fdch kal\u00f3ri\u00ed a cukru <\/strong>navy\u0161e. \u010casto sa ale objavuj\u00fa spr\u00e1vy, \u017ee by sme sa jej mali rad\u0161ej vyh\u00fdba\u0165, preto\u017ee je \u0161kodliv\u00e1 pre zdravie. Ako to teda v skuto\u010dnosti je? Dnes sa spolu pozrieme na to, \u010di je v poriadku ma\u0165 sukral\u00f3zu vo svojom jed\u00e1lni\u010dku.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Co_je_sukraloza\"><\/span>\u010co je sukral\u00f3za?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Sukral\u00f3za, zn\u00e1ma aj pod ozna\u010den\u00edm E955, je modern\u00e9 <strong>bezkalorick\u00e9 (neenergetick\u00e9) sladidlo,<\/strong> ktor\u00e9 je popul\u00e1rnou <strong>alternat\u00edvou tradi\u010dn\u00e9ho bieleho cukru. <\/strong>T\u00e1to l\u00e1tka je a\u017e <strong>600-kr\u00e1t slad\u0161ia ako cukor, <\/strong>no zaujme aj t\u00fdm, \u017ee nem\u00e1 nepr\u00edjemn\u00fa pachu\u0165, ktor\u00e1 \u010dasto sprev\u00e1dza umel\u00e9 sladidl\u00e1. V\u010faka intenz\u00edvne sladkej chuti sta\u010d\u00ed na docielenie rovnakej sladivosti ako m\u00e1 cukor pou\u017ei\u0165 len minim\u00e1lne mno\u017estvo sukral\u00f3zy, \u010do z nej rob\u00ed mimoriadne efekt\u00edvnu n\u00e1hradu pri v\u00fdrobe potrav\u00edn. V roku 1976 \u0161tudent britskej univerzity Queen&#8217;s College v Lond\u00fdne Shashikant Phadnis pracoval na v\u00fdskumnom projekte zameranom na biely cukor (sachar\u00f3zu). V priebehu experimentu dostal od svojho ved\u00faceho za \u00falohu otestova\u0165 l\u00e1tku, ktor\u00fa pr\u00e1ve vytvoril. Do\u0161lo v\u0161ak k nedorozumeniu a on namiesto testovania (anglicky <em>test<\/em>) l\u00e1tku ochutnal (anglicky <em>taste<\/em>). Na\u0161\u0165astie sa ni\u010d hrozn\u00e9ho nestalo, ale pr\u00e1ve naopak. Zistil, \u017ee novo syntetizovan\u00e1 l\u00e1tka je <strong>mimoriadne sladk\u00e1.<\/strong> Tento drobn\u00fd omyl viedol k objavu nov\u00e9ho umel\u00e9ho sladidla. <sup><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\">[1]<\/mark><\/sup><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Po tejto \u0161\u0165astnej n\u00e1hode za\u010dala spolo\u010dnos\u0165 Tate &amp; Lyle, ktor\u00e1 spolupracovala s Queen&#8217;s College, investova\u0165 do v\u00fdskumu sukral\u00f3zy. Potom spolu s firmou Johnson &amp; Johnson vyvinuli <strong>prv\u00e9<\/strong> <strong>sladidlo zo sukral\u00f3zy <\/strong>pod n\u00e1zvom<strong> Splenda, <\/strong>ktor\u00e9 sa za\u010dalo pred\u00e1va\u0165 v roku <strong>1991. <\/strong>V tej dobe bola toti\u017e sukral\u00f3za v Kanade schv\u00e1len\u00e1&nbsp; na pou\u017eitie v potravin\u00e1ch<strong>. <\/strong>V\u010faka tomu sa u\u017e mohla prid\u00e1va\u0165 do potrav\u00edn namiesto cukru a \u013eudia si z\u00e1rove\u0148 vedeli k\u00fapi\u0165 drobn\u00e9 s\u00e1\u010dky Splendy s obsahom sukral\u00f3zy.&nbsp;<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Na trhu Spojen\u00fdch \u0161t\u00e1tov americk\u00fdch sa objavila v roku <strong>1998,<\/strong> kedy ju povolil americk\u00fd \u00darad pre kontrolu potrav\u00edn a lie\u010div (<em>U.S. Food and Drug Administration<\/em>, FDA) pre pou\u017eitie v potravin\u00e1ch. Niet sa \u010domu divi\u0165, ve\u010f koniec koncov, <strong>sukral\u00f3za vznik\u00e1 pr\u00e1ve zo sachar\u00f3zy. <\/strong>&nbsp;Medzi t\u00fdmito dvoma l\u00e1tkami s\u00fa v\u0161ak z\u00e1sadn\u00e9 rozdiely. Sachar\u00f3za, zn\u00e1ma ako <strong>be\u017en\u00fd stolov\u00fd cukor,<\/strong> je oby\u010dajn\u00fd <strong>disacharid <\/strong>(tvoren\u00fd gluk\u00f3zou a frukt\u00f3zou), ktor\u00fd sa v tele rozklad\u00e1 a dod\u00e1va n\u00e1m <strong>energiu. <\/strong>Na druhej strane sukral\u00f3za sa v tele nepremie\u0148a na kal\u00f3rie, iba sladko chut\u00ed.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Ako sa vyr\u00e1ba sukral\u00f3za?<\/h3>\n\n\n\n<p>Sukral\u00f3za sa vyr\u00e1ba<strong> chemickou \u00fapravou sachar\u00f3zy. <\/strong>Konkr\u00e9tne doch\u00e1dza k tomu, \u017ee niektor\u00e9 hydroxylov\u00e9 skupiny (spojenie kysl\u00edka a vod\u00edka), ktor\u00e9 sa nach\u00e1dzaj\u00fa v molekule sachar\u00f3zy, s\u00fa nahraden\u00e9<strong> chl\u00f3rom. <\/strong>Tzv.<strong> chl\u00f3rovanie sachar\u00f3zy <\/strong>m\u00f4\u017ee niekoho vydesi\u0165, ale v skuto\u010dnosti nejde o \u017eiadny nebezpe\u010dn\u00fd proces. L\u00e1tka zost\u00e1va na\u010falej <strong>bezpe\u010dn\u00e1 <\/strong>na konzum\u00e1ciu, len s t\u00fdm rozdielom, \u017ee v tele sa <strong>zrazu spr\u00e1va \u00faplne inak.<\/strong> Sukral\u00f3za sa toti\u017e, na rozdiel od sachar\u00f3zy, <strong>takmer nevstreb\u00e1va do tela.<\/strong> Z \u010dreva do krvi prejde len zhruba 16 % z celkov\u00e9ho prijat\u00e9ho mno\u017estva. Hoci bola prim\u00e1rne zam\u00fd\u0161\u013ean\u00e1 ako sladidlo pre <strong>ob\u00e9znych <\/strong>a<strong> diabetikov<\/strong>, ktor\u00ed potrebuj\u00fa <strong>chudn\u00fa\u0165 <\/strong>a<strong> kontrolova\u0165 svoju hladinu cukru v krvi, <\/strong>dnes je z nej rozsiahlo pou\u017e\u00edvan\u00e9 sladidlo vo v\u0161emo\u017en\u00fdch typoch potrav\u00edn. Tie tak maj\u00fa v\u010faka nej men\u0161ie mno\u017estvo kal\u00f3ri\u00ed ako v pr\u00edpade pou\u017eitia cukru. Ide o mno\u017estvo sladidla, ktor\u00e9 je <strong>bezpe\u010dn\u00e9 konzumova\u0165 denne.<\/strong> U sukral\u00f3zy to predstavuje <strong>15 mg\/kg telesnej hmotnosti. <\/strong>V praxi to znamen\u00e1, \u017ee 70 kg \u010dlovek by mohol denne skonzumova\u0165 1050 mg sukral\u00f3zy. Tak\u00fa d\u00e1vku je naozaj \u0165a\u017ek\u00e9 dosiahnu\u0165, \u010do n\u00e1m dokazuje aj fakt, \u017ee priemern\u00fd odhadovan\u00fd denn\u00fd pr\u00edjem (EDI,<em> Estimated Daily Intake<\/em>) je podstatne ni\u017e\u0161\u00ed, a to<strong> 7 \u2013 140 mg denne. <\/strong>Ide o 7,5 a\u017e 150-n\u00e1sobne ni\u017e\u0161iu d\u00e1vku v porovnan\u00ed s ADI. <sup><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-orange-color\">[4,15]<\/mark><\/sup><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Je sukral\u00f3za vhodn\u00e1 v tehotenstve?<\/h3>\n\n\n\n<p>Prirodzene, tehotn\u00e9 \u017eeny si d\u00e1vaj\u00fa obzvl\u00e1\u0161\u0165 pozor na to, \u010do zaradia do svojho jed\u00e1lni\u010dka. A ke\u010f\u017ee sukral\u00f3za patr\u00ed medzi umel\u00e9 sladidl\u00e1, na prv\u00fd poh\u013ead m\u00f4\u017ee vzbudzova\u0165 obavy. Nie je sa v\u0161ak \u010doho b\u00e1\u0165. Je nebezpe\u010dn\u00e1 kv\u00f4li obsahu chl\u00f3ru<\/h3>\n\n\n\n<p>Hoci sukral\u00f3za obsahuje at\u00f3my chl\u00f3ru, jej chemick\u00e1 \u0161trukt\u00fara je napriek tomu stabiln\u00e1 a telo ju <strong>nerozklad\u00e1 na toxick\u00e9 zl\u00fa\u010deniny.<\/strong> Chl\u00f3r v sukral\u00f3ze nie je v nebezpe\u010dnej forme a nepredstavuje riziko pre zdravie pri be\u017enej konzum\u00e1cii.&nbsp;<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">3. V tele sa metabolizuje ako cukor<\/h3>\n\n\n\n<p>Na rozdiel od cukru, sukral\u00f3za sa v tele <strong>takmer v\u00f4bec nemetabolizuje.<\/strong> V\u00e4\u010d\u0161ina sukral\u00f3zy prech\u00e1dza tr\u00e1viacim syst\u00e9mom nezmenen\u00e1 a je vyl\u00fa\u010den\u00e1 mo\u010dom a stolicou.
