EFSA kontrolira omjer kemijskih tvari u hrani koji ne smije prema\u0161iti <strong>dozvoljenu normu ADI,<\/strong> \u0161to je <strong>maksimalna dnevna doza.<\/strong> Ona govori o tome koliko koje tvari mo\u017eemo unijeti, a da to za nas ne predstavlja zdravstveni rizik. <span style=\"color: #ff6600;\">[2] [3]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Prema <strong>Europskoj legislativi <\/strong>aditivi se u proizvodima mogu koristiti samo ako <strong>udovoljavaju dozvolama<\/strong> na temelju tri kriterija:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>dodatak hrani <strong>ne predstavlja sigurnosni rizik za zdravlje potro\u0161a\u010da<\/strong><\/li>\n\n\n\n<li><strong>upotreba takve tvari tehnolo\u0161ki je neophodna&nbsp;<\/strong><\/li>\n\n\n\n<li><strong>potro\u0161a\u010d <\/strong>upotrebom aditiva za hranu<strong> nije zavaran<\/strong> <span style=\"color: #ff6600;\">[2] [23]<\/span><\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading is-style-default\"><span class=\"ez-toc-section\" id=\"Koje_vrste_aditiva_%E2%80%9Ce-brojeva%E2%80%9D_poznajemo\"><\/span>Koje vrste aditiva \u201ce-brojeva\u201d poznajemo?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Aditive na temelju njihovog podrijetla dijelimo u tri osnovne kategorije:<\/p>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\">\n<li><strong>Prirodni<\/strong> &#8211; aditivi iz prirodnih izvora, proizvedeni bez kemijskog procesa<\/li>\n\n\n\n<li><strong>Sinteti\u010dki<\/strong> &#8211; ne pojavljuju se u prirodi, proizvedeni su u laboratorijima<\/li>\n\n\n\n<li><strong>Prirodno identi\u010dni<\/strong> &#8211; umjetno proizvedeni, no sastavom su isti kao prirodni aditivi<\/li>\n<\/ol>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Aditivi se dijele u pojedine kategorije i na temelju njihovih funkcija, i to na sljede\u0107i na\u010din:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>E100 \u2013 E199 (modifikatori boje)<\/li>\n\n\n\n<li>E200 \u2013 E299 (konzervansi)<\/li>\n\n\n\n<li>E300 \u2013 E399 (antioksidansi, regulatori kiselosti)<\/li>\n\n\n\n<li>E400 \u2013 E499 (zgu\u0161njiva\u010di, stabilizatori, emulgatori)<\/li>\n\n\n\n<li>E500 \u2013 E599 (regulatori kiselosti)<\/li>\n\n\n\n<li>E600 \u2013 E699 (poja\u010diva\u010di aroma)<\/li>\n\n\n\n<li>E900 \u2013 E999 (zamjenski zasla\u0111iva\u010di)<\/li>\n\n\n\n<li>E1000 \u2013 E1599 (ostali aditivi) <span style=\"color: #ff6600;\">[3]<\/span><\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading is-style-default\">Aditivi E100 \u2013 E199 (modifikatori boje)&nbsp;<\/h3>\n\n\n\n<p>Aditivi s brojem <strong>od 100 do 199 ozna\u010davaju modifikatore boje.<\/strong> Mo\u017eda zvu\u010di grozno da se u hranu dodaju umjetne boje kako bi nam proizvod izgledao atraktivnije, ali ova skupina prehrambenih aditiva sadr\u017ei i <strong>prirodna bojila<\/strong>. <span style=\"color: #ff6600;\">[4] [22]&nbsp;<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>E100 ozna\u010dava bojilo kurkumin<\/strong> koje se proizvodi iz korijena kurkume i koristi se kod proizvodnje margarina, sireva i ribljih \u0161tapi\u0107a. <strong>E101 ozna\u010duje riboflavin koji se zove i <a title=\"Vitamin B-Komplex GymBeam\" href=\"https:\/\/gymbeam.hr\/vitamin-b-complex-gymbeam.html\" target=\"_blank\" rel=\"noopener noreferrer\" class=\"ek-link\">vitamin B2<\/a>,<\/strong> koji se obi\u010dno nalazi u jajima ili zelenom <a href=\"https:\/\/gymbeam.hr\/blog\/tag\/povrce-hr\/\" class=\"ek-link\">povr\u0107u<\/a>. Vitamin B2 poma\u017ee cijepati bjelan\u010devine, masti i ugljikohidrate. Igra va\u017enu ulogu kod odr\u017eavanja opskrbe tijela energijom te se koristi kod proizvodnje sireva i margarina. <span style=\"color: #ff6600;\">[5]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>E150a ozna\u010dava bojilo karamel.<\/strong> Tamnosme\u0111a boja dobivena iz saharoze dodaje se u bezalkoholna pi\u0107a, piva i whiskey. <span style=\"color: #ff6600;\">[6] <\/span><strong>E120 ili karmin je crveno bojilo <\/strong>koje se dobiva od oplo\u0111enih zdrobljenih \u017eenki insekata Dactylopius coccus Costa. <strong>Dakle, radi se o biolo\u0161kom bojilu. <\/strong><span style=\"color: #ff6600;\">[7]&nbsp;<\/span><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/wpstatic.gymbeam.com\/blog\/wp-content\/uploads\/mageblog\/pick-and-mix-171342_1920_resize_700-gen.jpg\" alt=\"E aditivi-aditivi u boji\" width=\"843\" height=\"562\" title=\"E aditivi-aditivi u boji\"\/><\/figure>\n<\/div>\n\n\n<h3 class=\"wp-block-heading is-style-default\">Aditivi E200 \u2013 E299 (konzervansi)<\/h3>\n\n\n\n<p>Nije nikakva tajna da vam salama iz trgovine mo\u017ee izdr\u017eati i mjesec dana, a da se ne pokvari. <strong>Za to su zaslu\u017eni upravo konzervansi<\/strong> koji hranu odr\u017eavaju dulje svje\u017eom. Kao i u slu\u010daju modifikatora boje i ova \u010dinjenica tako\u0111er mo\u017ee biti zastra\u0161uju\u0107a i izazvati bojazan od konzumiranja ovih proizvoda. U normalnim okolnostima <strong>organski proizvodi imaju ograni\u010deni rok trajanja<\/strong> koji istekne nakon odre\u0111enog vremenskog perioda.<span style=\"color: #ff6600;\"> [4] [22]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Neki od konzervanasa koji se koriste u jelu uklju\u010duju <strong>kalijev nitrat u krvi (E249), <\/strong>koji se \u010desto koristi za \u010duvanje namirnica kao \u0161to je \u0161unka, konzervirano meso i kruh. <span style=\"color: #ff6600;\">[8]<\/span> Pove\u0107ani unos kalija presudan je za <strong>smanjenje rizika od kardiovaskularnih bolesti.<\/strong><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>E290, dakle, uglji\u010dni dioksid,<\/strong> bezbojni je plin te se prirodno pojavljuje u zemljinoj atmosferi kao element u tragovima. Tipi\u010dni proizvodi koji sadr\u017ee uglji\u010dni dioksid su: <strong>vino, bezalkoholna pi\u0107a i slatki\u0161i. <\/strong><span style=\"color: #ff6600;\">[9]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Fumarna kiselina&nbsp;(E297)<\/strong> dolazi iz biljaka roda Fumaria i mo\u017ee se koristiti za dodavanje okusa, oksigenaciju i <strong>poja\u010davanje okusa bezalkoholnih pi\u0107a<\/strong>. Fumarna kiselina obi\u010dno se proizvodi u tijelu svakog \u017eivog bi\u0107a i to za vrijeme direktnog boravka na suncu. <span style=\"color: #ff6600;\">[10]&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;<\/span><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/wpstatic.gymbeam.com\/blog\/wp-content\/uploads\/mageblog\/iStock-947132306_resize_700-gen.jpg\" alt=\"&quot;E-brojevi\u201d ili prehrambeni aditivi - jesu li doista opasni?   \" width=\"843\" height=\"562\" title=\"&quot;E-brojevi\u201d ili prehrambeni aditivi - jesu li doista opasni?   \"\/><\/figure>\n<\/div>\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading is-style-default\">Aditivi E300 \u2013 E399 (antioksidansi, regulatori kiselosti)<\/h3>\n\n\n\n<p>Antioksidansi igraju klju\u010dnu ulogu kod produljivanja roka trajanja proizvoda i kod pobolj\u0161anja okusa i izgleda hrane. Tako\u0111er poma\u017eu <strong>u smanjenju procesa poznatog kao enzimsko sme\u0111enje<\/strong> kada nakon nekog vremena boja vo\u0107a i <a href=\"https:\/\/gymbeam.hr\/blog\/tag\/povrce-hr\/\" class=\"ek-link\">povr\u0107a<\/a> postane sme\u0111a. <span style=\"color: #ff6600;\">[4] [22] <\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Primjer za prirodni antioksidans je <strong>askorbinska kiselina (E300) koja je zapravo <a title=\"Vitamin C GymBeam\" href=\"https:\/\/gymbeam.hr\/vitamin-c-1000-mg-gym-beam.html\" target=\"_blank\" rel=\"noopener noreferrer\" class=\"ek-link\">vitamin C<\/a>.<\/strong> <strong>Regulira kiselost i alkalnost hrane<\/strong> i spre\u010dava rast bakterija, kvasnih gljivica i plijesni, stoga se koristi i kao konzervans. Naj\u010de\u0161\u0107e se pojavljuje kod proizvodnje vina, bezalkoholnih pi\u0107a, d\u017eemova i druge hrane. <span style=\"color: #ff6600;\">[12]<\/span> \u0160to se ti\u010de <strong>sinteti\u010dkih antioksidanasa,<\/strong> tradicionalni primjer su galati <strong>E310, E311 a E312.<\/strong><span style=\"color: #ff6600;\"> [11]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Regulatori kiselosti <\/strong>koriste se kao pomo\u0107 kod <strong>kontrole alkalnih ili kiselih razina<\/strong> u namirnicama, \u010dime osiguravaju ugodniji okus hrane. Jedna od njih je naprimjer <strong>limunska kiselina (E330) <\/strong>koja je slaba organska kiselina koja se prirodno pojavljuje u plodovima citrusa. <span style=\"color: #ff6600;\">[12] <\/span><strong>Lecitin (E322) se obi\u010dno nalazi u \u017eutanjcima<\/strong> te je dio masnih kiselina u tijelu svakog \u017eivog organizma. Podr\u017eava pravilno funkcioniranje stanica i odr\u017eava zdravu razinu kolesterola.<span style=\"color: #ff6600;\"> [13]&nbsp; &nbsp;&nbsp;<\/span><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/wpstatic.gymbeam.com\/blog\/wp-content\/uploads\/mageblog\/smoothie-3697014_1920_resize_700-gen.jpg\" alt=\"&quot;E-brojevi\u201d ili prehrambeni aditivi - jesu li doista opasni?   \" width=\"843\" height=\"562\" title=\"&quot;E-brojevi\u201d ili prehrambeni aditivi - jesu li doista opasni?   \"\/><\/figure>\n<\/div>\n\n\n<h3 class=\"wp-block-heading is-style-default\">Aditivi E400 &#8211; E499 (zgu\u0161njiva\u010di, stabilizatori, emulgatori)<\/h3>\n\n\n\n<p><strong>Zgu\u0161njiva\u010di se dodaju proizvodima za volumen<\/strong> te pobolj\u0161avaju njihovu strukturu i izgled. Emulgatori se dodaju u namirnice zato da bi <strong>pomogli<\/strong> <strong>izmije\u0161ati sastojke koji se obi\u010dno ne povezuju.<\/strong> Primjer za to su voda i ulje. Stabilizatori, pak, paze na to da se <strong>tvari koje su ve\u0107 spojene emulgatorima ne bi razdvojile.<\/strong> Tipi\u010dan primjer je \u017eelatina koja u sebi ima elemente zgu\u0161njiva\u010da, stabilizatora i emulgatora u jednom. <span style=\"color: #ff6600;\">[4] [22]&nbsp;<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Sljede\u0107i primjer je <strong>aditiv E406, dakle agar.<\/strong> Potje\u010de iz prirodnog izvora morskih algi, a koristi se kao zgu\u0161njiva\u010d, stabilizator i emulgator u jednom. <span style=\"color: #ff6600;\">[14]<\/span> <strong>Kalcijev alginat (E404) <\/strong>je zgu\u0161njiva\u010d dobiven tako\u0111er od morskih algi te se dodaje u smjese za puding, mlijeko s okusom ili \u0161lag. <span style=\"color: #ff6600;\">[15]&nbsp; <\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Glicerol (E422) <\/strong>je uljni alkohol bez boje koji <strong>se proizvodi razlaganjem prirodnih masti alkalijama<\/strong> te se koristi u su\u0161enom vo\u0107u, likerima i votki. Pokazalo se da <strong>glicerin \u0161titi od o\u0161te\u0107enja DNA ultraljubi\u010dastim zrakama i zra\u010denjem. <\/strong><span style=\"color: #ff6600;\">[16]&nbsp; &nbsp; &nbsp;<\/span><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/wpstatic.gymbeam.com\/blog\/wp-content\/uploads\/mageblog\/iStock-522397275_resize_700-gen.jpg\" alt=\"&quot;E-brojevi\u201d ili prehrambeni aditivi - jesu li doista opasni?   \" width=\"843\" height=\"562\" title=\"&quot;E-brojevi\u201d ili prehrambeni aditivi - jesu li doista opasni?   \"\/><\/figure>\n<\/div>\n\n\n<h3 class=\"wp-block-heading is-style-default\">Aditivi E500 \u2013 E599 (regulatori kiselosti)<\/h3>\n\n\n\n<p>Regulatori kiselosti se u ve\u0107 du\u017ee vrijeme koriste u prehrambenoj industriji i njihov je <strong>glavni zadatak prilagoditi okus proizvoda<\/strong>. K tome, kiselo okru\u017eenje u hrani <strong>spre\u010dava stvaranje mnogih mikroorganizama.<\/strong> Neke regulatore kiselosti na\u0107i \u0107emo i u skupini aditiva s oznakom E300 &#8211; E399. <span style=\"color: #ff6600;\">[4] [22]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>E500 ozna\u010dava natrijev karbonat <\/strong>koji se javlja u javlja se u divljini, naprimjer u slanim jezerima ili morskoj vodi. Primjer za to je <strong>cinkov acetat s brojem E650 koji nije \u0161tetan u malim dozama<\/strong> te se koristi za poja\u010danje gorkog okusa kave i grejpa. To se doga\u0111a iz dva razloga &#8211; ili <strong>ne ispunjavaju niti jedan kriterij za uvr\u0161tenje ili mogu igrati vi\u0161e uloga<\/strong> te njihovo definiranje ne bi bilo jednozna\u010dno. <span style=\"color: #ff6600;\">[4] [22]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Primjer toga je <strong>p\u010delinji vosak koji se ozna\u010dava kao E901.<\/strong> Radi se o proizvodu koji se <strong>obi\u010dno javlja u prirodi te je proizveden kombiniranjem meda i peludi.<\/strong> Proizvodima dodaje sjaj stoga ga mo\u017eemo na\u0107i ne samo u kozmeti\u010dkim pripravcima, ve\u0107 i u slasti\u010darskim proizvodima za pripremu preljeva. <span style=\"color: #ff6600;\">[19]<\/span><strong> Hrani dodaje sjaj i \u0161elak (E904)<\/strong> koji potje\u010de od smole koju proizvode insekti Laccifer lacca. Koristi se za proizvodnju slasti\u010darskih proizvoda, ali i kao obloga za tablete. <span style=\"color: #ff6600;\">[20]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>AditivE955<\/strong> <strong>ozna\u010dava sukralozu,<\/strong> umjetni zasla\u0111iva\u010d koji je 600 puta sla\u0111i od \u0161e\u0107era. Radi se o sinteti\u010dkoj tvari koja, me\u0111utim, <strong>ne predstavlja rizik za zdravlje ljudi<\/strong> ako se pridr\u017eava dopu\u0161tenog standarda doziranja. No, osim te funkcije, ksilitol mo\u017ee slu\u017eiti i kao stabilizator i zgu\u0161njiva\u010d, zato ga se ne mo\u017ee jasno definirati konkretnom kategorijom. <span style=\"color: #ff6600;\">[21]&nbsp;&nbsp;<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Postoji \u0161iroki raspon prirodnih aditiva<\/strong> koji imaju blagotvoran utjecaj na na\u0161e zdravlje te i unato\u010d tome nose oznaku \u201ce-brojevi\u201d. Stoga je besmislica da proizvode ne kupujemo samo zato \u0161to sadr\u017ee aditive.
