Knete die Mischung <strong>mit der Hand<\/strong> zu einem <strong>kompakten<\/strong> Teig <strong>ohne Klumpen<\/strong>. Stelle den so vorbereiteten Teig <strong>f\u00fcr 1 Stunde in den K\u00fchlschrank<\/strong>. <strong>Bereite<\/strong> in der Zwischenzeit <strong>die F\u00fcllung zu, indem du das Eiwei\u00df<\/strong> mit einer Prise Salz <strong>aufschl\u00e4gst<\/strong>. Gib die <strong>H\u00e4lfte<\/strong> des vorbereiteten <strong>Teigs<\/strong> in die Backform (wir haben eine Form mit einer Gr\u00f6\u00dfe von 22 x 22 cm verwendet), <strong>gl\u00e4tte ihn vorsichtig<\/strong> mit der Hand und beschichte ihn mit der vorbereiteten <strong>Quarkf\u00fcllung<\/strong>. Verteile den restlichen Teig auf der Oberseite des Kuchens und gl\u00e4tte ihn wieder vorsichtig mit der Hand. Backe den Kuchen im vorgeheizten Ofen bei <strong>170 \u00b0C f\u00fcr etwa 35 Minuten<\/strong>. Wenn du den Kuchen aus dem Ofen nimmst, wird er noch fester und du kannst ihn im K\u00fchlschrank aufbewahren. <strong>Mit frischen Himbeeren garnieren<\/strong> und servieren.
