U nastojanjima za <\/span><b>zdravim na\u010dinom \u017eivota i kvalitetnom prehranom<\/b><span style=\"font-weight: 400;\"> posebno se tra\u017ee proizvodi bez razli\u010ditih kemijskih intervencija, hormona ili GMO-a. Kako biste mogli re\u0107i da je povr\u0107e ili vo\u0107e <\/span><b>bio ili organsko<\/b><span style=\"font-weight: 400;\">, morate <\/span><b>ispuniti odre\u0111ene uvjete<\/b><span style=\"font-weight: 400;\">. No, je li konzumacija organske hrane zaista <\/span><b>zdravija<\/b><span style=\"font-weight: 400;\"> i ne donosi li odre\u0111ene <\/span><b>rizike i nedostatke?<\/b><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Organska_hrana_%E2%80%93_sto_to_zapravo_znaci\"><\/span>Organska hrana &#8211; \u0161to to zapravo zna\u010di?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">Izraz <\/span><b>&#8220;organski&#8221;<\/b><span style=\"font-weight: 400;\"> popularniji je u SAD-u, a termin <\/span><b>&#8220;BIO&#8221;<\/b> <b>vjerojatno je \u010de\u0161\u0107i i poznatiji Europljanima<\/b><span style=\"font-weight: 400;\">. Oznaka &#8220;bio&#8221; ili &#8220;organski&#8221; va\u017ena je mnogim ljudima, no znate li pravu razliku u podrijetlu i uzgoju <\/span><b>uobi\u010dajene hrane i organskih proizvoda?<\/b><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Organska hrana u SAD-u<\/h3>\n\n\n\n<p><span style=\"font-weight: 400;\">Oznaka <\/span><b>&#8220;organski&#8221;<\/b><span style=\"font-weight: 400;\"> regulirana je i <\/span><b>uvjeti<\/b><span style=\"font-weight: 400;\"> za dobivanje navedenog termina moraju biti ispunjeni. U <\/span><b>SAD-u<\/b><span style=\"font-weight: 400;\"> to zna\u010di da se usjevi uzgajaju <\/span><b>bez GMO-a, sinteti\u010dkih pesticida ili gnojiva na bazi naftnog ili kanalizacijskog mulja<\/b><span style=\"font-weight: 400;\">. U slu\u010daju \u017eivotinja koje se dr\u017ee zbog mesa i njihovih proizvoda, ekolo\u0161ka poljoprivreda mora sadr\u017eavati <\/span><b>organsku hranu<\/b><span style=\"font-weight: 400;\"> i omogu\u0107iti \u017eivotinjama kretanje vani. U Sjedinjenim Ameri\u010dkim Dr\u017eavama, ako su hrana ili pi\u0107e ozna\u010deni kao &#8220;organski&#8221;, to zna\u010di da je proizvod <\/span><b>uzgojen, proizveden, pregledan i certificiran da udovoljava organskim standardima Nacionalnog organskog programa (NOP)<\/b><span style=\"font-weight: 400;\">, program <\/span><b>Ministarstva poljoprivrede SAD-a (USDA)<\/b><span style=\"font-weight: 400;\">. Proizvodi moraju udovoljavati standardima ovog programa, koji uklju\u010duju <\/span><b>pesticide, gnojiva, bioin\u017eenjering i zra\u010denje, antibiotike i hormone rasta,<\/b><span style=\"font-weight: 400;\"> kao i praksu odr\u017eivog razvoja. U Sjedinjenim Dr\u017eavama postoje <\/span><b>tri razine<\/b><span style=\"font-weight: 400;\"> organskih proizvoda <\/span><span style=\"font-weight: 400; color: #ff6600;\">[2]<\/span><span style=\"font-weight: 400;\">:<\/span><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><b>100% organsko<\/b><span style=\"font-weight: 400;\">: 100% sastojaka su organski, obrada je 100% organska.<\/span><\/li>\n\n\n\n<li><b>Organsko<\/b><span style=\"font-weight: 400;\">: 95% ili vi\u0161e sastojaka su organski, neki kemijski aditivi koji su odobreni od USDA mogu se koristiti u preradi. <\/span><\/li>\n\n\n\n<li><b>Napravljeno od organskih sastojaka<\/b><span style=\"font-weight: 400;\">: Odre\u0111eni sastojci su organski. Ova izjava na naljepnici nije USDA standardna izjava o ozna\u010davanju i ne mo\u017ee se koristiti izvan oznake sa sastojcima na etiketi. Me\u0111utim, navedena oznaka mo\u017ee se posti\u0107i ako je USDA nadle\u017eni certificirani agent provjerio tvrdnju da su neki sastojci organski.<\/span><\/li>\n<\/ol>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><span style=\"font-weight: 400;\">USDA zapravo ne daje organski &#8220;pe\u010dat&#8221; ni za \u0161to, i nije dovoljno da ne koristite sinteti\u010dko gnojivo za povr\u0107e ili da se krave puste &#8220;na zrak&#8221;. Propisi tako\u0111er obuhva\u0107aju suzbijanje \u0161teto\u010dina i korova, te <\/span><b>kontrolu kvalitetu tla<\/b><span style=\"font-weight: 400;\">. \u0160to se ti\u010de tla, ne mo\u017eete ga opisivati \u201edjevi\u010danskim\u201c iz dana u dan i proglasiti ga pogodnim za organske kulture. Pe\u010dat \u0107ete dobiti samo ako zabranjene tvari <\/span><b>nisu kori\u0161tene na tlu 3 godine prije prikupljanja<\/b><span style=\"font-weight: 400;\">. U slu\u010daju organskog mesa \u017eivotni uvjeti \u017eivotinje moraju se prilagoditi njihovom prirodnom pona\u0161anju. Prema slu\u017ebenoj EU definiciji, <\/span><b>organska proizvodnja zna\u010di odr\u017eiv poljoprivredni sustav koji po\u0161tuje okoli\u0161 i dobrobit \u017eivotinja<\/b><span style=\"font-weight: 400;\">, ali tako\u0111er uklju\u010duje i sve ostale karike <\/span><b>prehrambenog lanca<\/b><span style=\"font-weight: 400;\">. <\/span><span style=\"font-weight: 400; color: #ff6600;\">[4]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><span style=\"font-weight: 400;\">Standardi organske hrane ne odnose se samo na <a href=\"https:\/\/gymbeam.hr\/blog\/tag\/povrce-hr\/\" class=\"ek-link\">povr\u0107e<\/a>, vo\u0107e ili \u017eivotinje i njihove proizvode. Posebna pravila primjenjuju se i na <\/span><b>kiseline,<\/b> <b>akvakulturu i vina<\/b><span style=\"font-weight: 400;\">. Nemate pojma \u0161to je <\/span><b>akvakultura<\/b><span style=\"font-weight: 400;\">? To je isto \u0161to i <\/span><b>agrokultura<\/b><span style=\"font-weight: 400;\">, ali odnosi se na uzgoj <\/span><b>vodenih organizama<\/b><span style=\"font-weight: 400;\">. <\/span><b>Uredba<\/b><span style=\"font-weight: 400;\"> se tako\u0111er odnosi na <\/span><b>berbu divljih biljaka<\/b><span style=\"font-weight: 400;\"> pod uvjetom da se po\u0161tuju prirodni uvjeti. <\/span><b>Jedino divljina i ribolov <\/b><span style=\"font-weight: 400;\">nisu uklju\u010deni u organsku proizvodnju. U odnosu na sve, mo\u017eemo spomenuti neke primjere<\/span><span style=\"font-weight: 400; color: #ff6600;\"> [4] [5]<\/span><span style=\"font-weight: 400;\">:<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>zabrana genetski modificiranih organizama (GMO)<\/li>\n\n\n\n<li>zabrana du\u0161i\u010dnih mineralnih gnojiva<\/li>\n\n\n\n<li>sto\u010darstvo na svje\u017eem zraku<\/li>\n\n\n\n<li>stroga ograni\u010denja upotrebe antibiotika kod \u017eivotinja<\/li>\n\n\n\n<li>ograni\u010denje gnojiva, pesticida i herbicida<\/li>\n\n\n\n<li>spre\u010davanje prekomjerne reprodukcije \u017eivotinja<\/li>\n\n\n\n<li>kori\u0161tenje organske hrane<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><span style=\"font-weight: 400;\">Jedinstveni logotip odnosi se i na sve pakirane organske prehrambene proizvode koji su proizvedeni na podru\u010dju zemalja EU i ispunjavaju odgovaraju\u0107e standarde. Mo\u017eda ste to primijetili, ekolo\u0161ki znak prikazuje <\/span><b>zvijezde koje oblikuju list na zelenoj pozadini<\/b><span style=\"font-weight: 400;\">. Ovo je ozna\u010davanje obvezno za svu organsku hranu <\/span><b>u EU od 1.7.2012<\/b><span style=\"font-weight: 400;\">. Logo je predstavljen 1. srpnja 2010., ali prijelaz na novu vrstu ozna\u010davanja zahtijeva odre\u0111eno vrijeme pa ga nije mogu\u0107e mijenjati iz dana u dan. Kako bi se izbjeglo gubljenje ve\u0107 stvorene ambala\u017ee bez etiketiranja, odre\u0111eno je dvogodi\u0161nje razdoblje kako bi se prilagodili promjenama. <\/span><span style=\"font-weight: 400; color: #ff6600;\">[6]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><span style=\"font-weight: 400;\">Samo za radoznale, tako da ne mislite da je to bila iznenadna ideja Europske unije. Ideju o zajedni\u010dkom obveznom logu ve\u0107 su promovirale dr\u017eave \u010dlanice <\/span><b>2007. godine.<\/b><span style=\"font-weight: 400;\"> Dizajn loga bio je predmet <\/span><b>natje\u010daja 2009. godine na kojem je sudjelovalo 3400 studenata umjetnosti i dizajna.<\/b> <span style=\"font-weight: 400; color: #ff6600;\">[6]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Znaci_li_%E2%80%9Cbio%E2%80%9D_i_%E2%80%9Corgansko%E2%80%9D_isto\"><\/span>Zna\u010di li &#8220;bio&#8221; i &#8220;organsko&#8221; isto?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">Mo\u017eda ste primijetili da se u EU organska hrana \u010desto naziva <\/span><b>\u201ebio\u201c, a ne \u201eorganska<\/b><span style=\"font-weight: 400;\">\u201c. Nije lo\u0161e objasniti jesu li to uistinu ekvivalentni pojmovi ili zapravo podrazumijevaju razli\u010dito procijenjenu kvalitetu hrane. <\/span><b>Organska proizvodnja je ve\u0107 poznata u EU ili SAD-u,<\/b><span style=\"font-weight: 400;\"> pojednostavljeno mo\u017eemo re\u0107i kako je to prijateljska proizvodnja s obzirom na prirodu, \u017eivotinje i \u010dovjeka. Pojmovi kao \u0161to su <\/span><b>&#8220;bio&#8221;, &#8220;organski&#8221; ili &#8220;eko&#8221;<\/b><span style=\"font-weight: 400;\"> oznake su za organske proizvode. Istina je da se etiketa razlikuje ovisno o dr\u017eavi u kojoj \u017eivite. Zemlje koje govore engleski jezik <\/span><b>koriste izraz &#8220;organski&#8221;<\/b><span style=\"font-weight: 400;\">, dok u zemljama koje koriste njema\u010dke ili latinske grane jezika, <\/span><b>varijanta &#8220;bio \/ biolo\u0161ka&#8221; prevladava<\/b><span style=\"font-weight: 400;\">. Mnogi stariji ljudi koji \u017eive na selima re\u0107i \u0107e vam da je sva hrana bila organska, <\/span><b>jer se toliko kemikalija nije koristilo<\/b><span style=\"font-weight: 400;\">. Tko zna \u0161to je istina, ali <\/span><b>kemijska gnojiva i pesticide<\/b><span style=\"font-weight: 400;\"> ve\u0107 godinama koriste ne samo veliki proizvo\u0111a\u010di, ve\u0107 i poljoprivrednici koji uzgajaju za vlastitu upotrebu. <\/span><b>Prema stru\u010dnjacima, sva je hrana bila organska prije razvoja du\u0161i\u010dnih gnojiva <\/b><span style=\"font-weight: 400;\">u ranom 20. stolje\u0107u. U Njema\u010dkoj je organska poljoprivreda uvedena ve\u0107 u <\/span><b>1920-ima<\/b><span style=\"font-weight: 400;\">, te i u drugim zemljama zasigurno mnogo prije 2000. godine. <\/span><b>Slu\u017ebena regulacija &#8220;organske&#8221; proizvodnje<\/b><span style=\"font-weight: 400;\"> u EU po\u010dela je 1991., a 1999. godine pravila su <\/span><b>pro\u0161irena i na sto\u010darsku proizvodnju<\/b><span style=\"font-weight: 400;\">. Na\u0161i preci smatrali su uobi\u010dajenim gnojiti polja \u201ebiolo\u0161kim resursima\u201c, a krave ili pili\u0107i imali su vi\u0161e prostora. Oni proizvode velike koli\u010dine proizvoda, a puno mesa i ostalih \u017eivotinjskih proizvoda dolazi na \u0161altere. Otprilike <\/span><b>2 od 3 doma\u0107e \u017eivotinje<\/b><span style=\"font-weight: 400;\"> potje\u010du iz uzgoja velikih razmjera, ako to ne mo\u017eete zamisliti u brojkama, to predstavlja <\/span><b>vi\u0161e od 60 milijardi \u017eivotinja godi\u0161nje.<\/b> <span style=\"font-weight: 400; color: #ff6600;\">[9]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><b>Uvjeti proizvodnje i uzgoja variraju od malih do velikih proizvo\u0111a\u010da.<\/b><span style=\"font-weight: 400;\"> Neki su certificirani i njihovi provjereni organski proizvodi dolaze s farme, drugi koriste konvencionalne metode. Pitanje je li <\/span><b>oznaka &#8220;organski&#8221; zaista stopostotno jamstvo<\/b><span style=\"font-weight: 400;\"> unosa isklju\u010divo zdrave hrane, bez ikakvih rizika. Mnogi su se znanstvenici pozabavili ovom temom, a rezultati nekih istra\u017eivanja mogu vas iznenaditi.<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><span style=\"font-weight: 400;\">Prije svega, poznato je za organsku hranu da se za njezin uzgoj <\/span><b>ne koriste sinteti\u010dke tvari.<\/b><span style=\"font-weight: 400;\"> To je istina, ali <\/span><b>postoje neke iznimke<\/b><span style=\"font-weight: 400;\">. Lista uklju\u010duje <\/span><span style=\"font-weight: 400; color: #ff6600;\">[22] [23]<\/span><span style=\"font-weight: 400;\">:<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>sinteti\u010dke tvari koje se mogu upotrijebiti<\/li>\n\n\n\n<li>prirodne &#8220;ne-sinteti\u010dke&#8221; tvari koje su zabranjene<\/li>\n\n\n\n<li>&#8220;anorganske&#8221; tvari koje se mogu koristiti za prera\u0111ene organske proizvode<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><b>Umjetni pesticidi<\/b><span style=\"font-weight: 400;\"> zabranjeni su u organskoj proizvodnji, s nekoliko izuzetaka. Me\u0111utim, postoje i <\/span><b>prirodni pesticidi<\/b><span style=\"font-weight: 400;\"> koji se mogu koristiti za organske proizvode. Pridjev &#8220;prirodno&#8221; na prvi pogled zvu\u010di dobro, <\/span><b>ali ne mora nu\u017eno biti mnogo bolja opcija za okoli\u0161 ili potro\u0161a\u010da.<\/b><span style=\"font-weight: 400;\"> Stoga se nemojte zadovoljiti spoznajom da je bez \u201esintetike\u201c sve uvijek bolje. Istra\u017eiva\u010di su uzeli u obzir <\/span><b>17 studija provedenih na ljudima i 223 ispitivanja<\/b><span style=\"font-weight: 400;\"> koja su prou\u010davala razine hranjivih nutrijenata i razinu ne\u010disto\u0107a u hrani. Prema studiji, konzumacija organske hrane <\/span><b>mo\u017ee umanjiti izlo\u017eenost bakterijama<\/b><span style=\"font-weight: 400;\"> koje su otporne na antibiotike ili ostatke pesticida. Ono \u0161to je najva\u017enije, <\/span><b>u literaturi svakako nedostaje uvjerljivih dokaza<\/b><span style=\"font-weight: 400;\"> da je organska hrana znatno bolja od konvencionalne varijante. <\/span><span style=\"font-weight: 400; color: #ff6600;\">[24]<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><span style=\"font-weight: 400;\">Na poljoprivrednu proizvodnju utje\u010de niz faktora u njezinu procesu. Mo\u017ee se dogoditi da u odre\u0111enim vrstama organske jabuke prona\u0111ete vi\u0161e vitamina nego u uobi\u010dajenoj varijanti. Postoje studije \u010diji su uzorci zaista potvrdili znatno ve\u0107e koli\u010dine specifi\u010dnih hranjivih sastojaka. Me\u0111utim, nemojte o\u010dekivati \u200b\u200bda \u0107e se ovo automatski primijeniti na sve hranjive tvari u bilo kojem organskom proizvodu.<\/span><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Prednosti_i_nedostaci_organske_hrane\"><\/span>Prednosti i nedostaci organske hrane<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Konzumiranje organske hrane donosi nekoliko prednosti, ali \u010dak i u slu\u010daju &#8220;organske&#8221; hrane mo\u017ee do\u0107i do zna\u010dajnih nedostataka. Jedan dio provedenih studija ukazuje na pove\u0107ani udio flavonoida u organskoj hrani <\/span><b>za koje su karakteristi\u010dna antioksidacijska svojstva.<\/b><span style=\"font-weight: 400;\"> Tradicionalni uzgajiva\u010di \u010desto koriste sinteti\u010dka gnojiva, a \u201eneorganske kulture\u201c dobivaju hranjive tvari iz gnojiva koja se rade od <\/span><b>fosilnih goriva<\/b><span style=\"font-weight: 400;\">, \u0161to ne zvu\u010di primamljivo. <\/span><span style=\"font-weight: 400; color: #ff6600;\">[14] [15] [16]<\/span><\/li>\n\n\n\n<li><b>Odsustvo antibiotika i hormona<\/b><span style=\"font-weight: 400;\"> &#8211; regulacija organske hrane strogo je povezana s navedenim tvarima i ograni\u010dava njihovu upotrebu. <\/span><span style=\"font-weight: 400; color: #ff6600;\">[17]<\/span><\/li>\n\n\n\n<li><b>Manje kemikalija<\/b><span style=\"font-weight: 400;\"> &#8211; ostaci pesticida i kadmija bili su ni\u017ei u organskim proizvodima, ali istodobno treba dodati da su i u konvencionalnim proizvodima razine navedenih kemikalija bile ispod sigurnosnih granica. Pesticidi ili herbicidi mogu imati negativan utjecaj na tijelo. Obi\u010dni poljoprivrednici mogu koristiti razli\u010dite na\u010dine koji pobolj\u0161avaju proizvodnju i tro\u0161kove. Prehrana se sastoji od osobnih odluka i mogu\u0107nosti svakog od nas.
