Cut hokkaido pumpkin into a half and <strong>scoop out all the seeds<\/strong>. Put the halves onto a baking sheet into the oven and<strong> roast for 50 minutes<\/strong>, until the flesh is soft. Once the pumpkin is roasted, skin it off and<strong> blend with hand blender to get the puree as smooth as possible.<\/strong><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Meanwhile prepare chicken breasts and rub them with salt and seasoning. Put the chicken breasts in the heated skillet with&nbsp;<a title=\"Olive Oil Cooking Spray - GymBeam\" href=\"https:\/\/gymbeam.sk\/sprej-na-varenie-olive-oil-cooking-spray-201-g-gymbeam.html\" target=\"_blank\" rel=\"noopener noreferrer\" class=\"ek-link\">olive oil<\/a>. Add a splash of water, cover the pan and <strong>roast until soft<\/strong>. Take another skillet and <strong>saut\u00e9 chopped onion<\/strong> until translucent. Add Arborio rice and continue to saut\u00e9. Deglaze with white wine and continue simmering, then gradually <strong>add vegetable broth<\/strong>. Simmer the rice over medium-high heat for approximately 20 minutes, until <strong>broth is absorbed.&nbsp;<\/strong><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>When the rice is tender, <strong>add hokkaido pumpkin puree<\/strong> and salt if needed. Continue to simmer. Remove cooked risotto and <strong>add shredded parmesan<\/strong>.
