Tieto ingrediencie s\u00fa najvy\u0161\u0161ej kvality a <strong>sp\u013a\u0148aj\u00fa \u0161tandardy EFSA<\/strong> pre \u0165a\u017ek\u00e9 kovy, pestic\u00eddy, horm\u00f3ny, antibiotik\u00e1 a mikr\u00f3by. Suroviny pou\u017e\u00edvan\u00e9 pri v\u00fdrobe nikdy nevyber\u00e1me pod\u013ea najni\u017e\u0161ej ceny, ale db\u00e1me na \u010distotu (pred\u00eds\u0165 kontaminantom, ako s\u00fa horm\u00f3ny, antibiotik\u00e1 a \u0165a\u017ek\u00e9 kovy), kvalitu a vyu\u017eite\u013enos\u0165 pre \u00faspe\u0161n\u00fd vedeck\u00fd v\u00fdskum.<\/p>\n<p dir=\"ltr\">\n<p><strong>2. Overenie efekt\u00edvnosti surov\u00edn vedeck\u00fdm v\u00fdskumom:<\/strong> Pre maxim\u00e1lny \u00fa\u010dinok pou\u017e\u00edvame tak\u00e9 suroviny a d\u00e1vkovania, ktor\u00e9 presne replikuj\u00fa naj\u00faspe\u0161nej\u0161ie v\u00fdsledky z\u00edskan\u00e9 vedeck\u00fdch \u0161t\u00fadiami.<\/p>\n<p dir=\"ltr\"><strong>3. V\u00fdroba:<\/strong> Cel\u00fd proces na\u0161ej v\u00fdroby je v pr\u00edsnom s\u00falade s Good Manufacturing Practice (GMP) pre oblas\u0165 v\u00fdroby, balenia a skladovania. GMP, v preklade Spr\u00e1vny postup v\u00fdroby, znamen\u00e1, \u017ee v\u0161etky procesy v\u00fdroby musia by\u0165 v s\u00falade <strong>s pr\u00edsnymi pravidlami a smernicou <\/strong>s podstatne vy\u0161\u0161\u00edmi po\u017eiadavkami a \u0161tandardmi, ako s\u00fa normy DIN a ISO. Jednotliv\u00e9 procesy v\u00fdroby mus\u00edme v\u017edy detailne pop\u00edsa\u0165 a zdokumentova\u0165 na v\u0161etk\u00fdch \u00farovniach jednotliv\u00fdch oper\u00e1ci\u00ed. Z\u00e1rove\u0148 je dan\u00e9, \u017ee v\u017edy mus\u00edme sledova\u0165 pou\u017eit\u00e9 suroviny a vykon\u00e1van\u00e9 procesy. Kontrola kvality, ako neodmyslite\u013en\u00e1 s\u00fa\u010das\u0165 GMP, mus\u00ed by\u0165 <strong>efekt\u00edvna, bezchybn\u00e1 a kompletne zdokumentovan\u00e1.<\/strong><\/p>\n<p dir=\"ltr\"><strong>4. Bielkoviny z\u00edskan\u00e9 zo \u017eivo\u010d\u00ed\u0161nych zdrojov<\/strong> musia poch\u00e1dza\u0165 z mlieka kr\u00e1v k\u0155men\u00fdch \u010derstvou tr\u00e1vou chovan\u00fdch pod\u013ea pravidiel<em> four Welfare Quality\u00ae<\/em> &#8211; dobr\u00e9 k\u0155menie, dobr\u00e9 ustajnenie, dobr\u00e9 zdravie a spr\u00e1vny pr\u00edstup pod\u013ea <strong>nariadenia <\/strong><strong>Eur\u00f3pskej komisie \u010d\u00edslo 834\/2007 (organic products)<\/strong><strong>.<\/strong> V\u0161etky na\u0161e produkty s\u00fa vyroben\u00e9 z deriv\u00e1tov mlieka z kr\u00e1v pas\u00facich sa na vo\u013en\u00fdch pastv\u00e1ch. Tieto kravy musia by\u0165 na pastve minim\u00e1lne 720 hod\u00edn ro\u010dne.<\/p>\n<p dir=\"ltr\"> <img decoding=\"async\" title=\"Vyjadrenie v\u00fdrobcu k prote\u00ednu Zeus a jeho rozboru\" src=\"https:\/\/wpstatic.gymbeam.com\/blog\/wp-content\/uploads\/mageblog\/certifik_ty_1.png\" alt=\"Vyjadrenie v\u00fdrobcu k prote\u00ednu Zeus a jeho rozboru\" \/><\/p>\n<p dir=\"ltr\"><strong>To znamen\u00e1, \u017ee:<\/strong><\/p>\n<p dir=\"ltr\">1) Produkty s\u00fa vyroben\u00e9 z vedecky testovan\u00fdch surov\u00edn s vedecky overen\u00fdmi d\u00e1vkami jednotliv\u00fdch zlo\u017eiek.<\/p>\n<p dir=\"ltr\">2) Kontrola kvality zah\u0155\u0148a anal\u00fdzu v\u0161etk\u00fdch surov\u00edn pou\u017eit\u00fdch pri v\u00fdrobe a v\u0161etk\u00fdch \u0161ar\u017e\u00ed hotov\u00fdch v\u00fdrobkov.<\/p>\n<p dir=\"ltr\">3) Suroviny s\u00fa starostlivo spracovan\u00e9 tak, aby sa zachovala ich chemick\u00e1 komplexnos\u0165, biologick\u00e1 hodnota a \u00fa\u010dinky.<\/p>\n<h3 dir=\"ltr\">Pri v\u00fdvoji formul\u00e1cie produktov postupujeme pod\u013ea nasleduj\u00facich krokov:<\/h3>\n<p dir=\"ltr\">1. Zdokumentujeme zoznam surov\u00edn a ich technick\u00fd rozbor. Na z\u00e1klade tejto dokument\u00e1cie definujeme obsah makrozlo\u017eiek a v\u00fdsledkom je obsah bielkov\u00edn, sacharidov a tukov.<\/p>\n<p dir=\"ltr\">2. N\u00e1sledne porovn\u00e1me vypo\u010d\u00edtan\u00e9 &#8220;teoretick\u00e9&#8221; zlo\u017eenie a zlo\u017eenie vytvoren\u00e9 v praxi. Vo v\u00fdsledku nech\u00e1vame st\u00e1le 10% odch\u00fdlku, ke\u010f\u017ee <strong>pr\u00edroda je nevyspytate\u013en\u00e1<\/strong>. Syntetick\u00e9 rie\u0161enie by bolo s\u00edce stabilnej\u0161ie, ale my vol\u00edme pr\u00edrodn\u00fa cestu, preto sa m\u00f4\u017eu jednotliv\u00e9 \u0161ar\u017ee v\u00fdrobkov mierne l\u00ed\u0161i\u0165.<\/p>\n<p dir=\"ltr\">\n<p dir=\"ltr\">V\u010faka bohat\u00fdm pastvin\u00e1m je pou\u017eit\u00e9 mlieko prirodzene bohat\u00e9 na aromatick\u00e9 zlo\u017eky a endemick\u00fa mikrofl\u00f3ru, ktor\u00e9 <strong>sa l\u00ed\u0161ia v z\u00e1vislosti od ro\u010dn\u00e9ho obdobia a geografickej polohy<\/strong> pastviny. To znamen\u00e1 \u017ee koncentr\u00e1cia bielkoviny vo vy\u0165a\u017eenej srv\u00e1tke <strong>sa m\u00f4\u017ee meni\u0165 o 5-7%<\/strong>. (Je to podobn\u00e9 ako obsah cukru v hrozne, v\u00edne, at\u010f&#8230; mysl\u00edm si, \u017ee to nie je potrebn\u00e9 \u010falej rozobera\u0165.) T\u00e1to odch\u00fdlka je pre n\u00e1s akceptovate\u013en\u00e1 a nemysl\u00edme si, \u017ee je kv\u00f4li nej potrebn\u00e9 produkt umelo obohacova\u0165. Nutri\u010dn\u00e9 hodnoty s\u00fa vypo\u010d\u00edtan\u00e9 <strong>na z\u00e1klade nutri\u010dn\u00fdch hodn\u00f4t su\u0161iny<\/strong> pou\u017eitej suroviny, ktor\u00e9 nesk\u00f4r zn\u00ed\u017eime o podiel pr\u00edrodn\u00fdch ochucovadiel pou\u017eit\u00fdch pri v\u00fdrobe produktu. Priemern\u00e9 nutri\u010dn\u00e9 hodnoty poch\u00e1dzaj\u00fa priamo z anal\u00fdzy z\u00e1kladnej formul\u00e1cie produktu.<\/p>\n<p dir=\"ltr\">\n<p dir=\"ltr\">Vezmeme vzorku z\u00e1kladnej neochutenej zmesi prote\u00ednov a analyzujeme 2 z\u00e1kladn\u00e9 makroingrediencie. Tretia je kalkulovan\u00e1 z v\u00fdsledkov dvoch analyzovan\u00fdch, v\u010faka \u010domu z\u00edskame <strong>najpresnej\u0161iu reprezentat\u00edvnu vzorku<\/strong>, ke\u010f\u017ee z\u00edska\u0165 reprezentat\u00edvnu vzorku s u\u017e pridan\u00fdm 3%-n\u00fdm ochuten\u00edm je takmer nemo\u017en\u00e9. Niekde sa chrumkav\u00e9 k\u00fasky \u010dokol\u00e1dov\u00fdch ty\u010diniek pou\u017eit\u00e9 pri tomto produkte m\u00f4\u017eu vyskytova\u0165 vo v\u00e4\u010d\u0161om mno\u017estve, niekde v men\u0161om. Odch\u00fdlka podielu samotnej ochucovacej zmesi tvorenej s k\u00faskami orie\u0161kov, su\u0161ienok alebo \u010dokol\u00e1dy <strong>m\u00f4\u017ee by\u0165 niekedy aj 10%. <\/strong>V\u0161etky tolerancie s\u00fa <strong>v s\u00falade s regul\u00e1ciou (EU) \u010d\u00edslo 1169\/2011 a smernicami 90\/496\/EEC a 2002\/46\/EC <\/strong>o ozna\u010dovan\u00ed potrav\u00edn.<\/p>\n<p dir=\"ltr\">4. V\u0161etky zmesi s\u00fa n\u00e1sledne testovan\u00e9 na kvalitu produktu, \u0165a\u017ek\u00e9 kovy (Hg, As, Cd, Pb), pestic\u00eddy, horm\u00f3ny a antibiotik\u00e1.<\/p>\n<p>5. Vzorka z ka\u017edej \u0161ar\u017ee fin\u00e1lneho produktu je uskladnen\u00e1 minim\u00e1lne 3 roky po v\u00fdrobe pre n\u00e1sledn\u00fa priebe\u017en\u00fa kontrolu kvality.<\/p>\n<p><strong>Pred umiestnen\u00edm na trh je prote\u00ednov\u00e1 zmes 3-kr\u00e1t testovan\u00e1. <\/strong>Ver\u00edme, \u017ee nie je podstatn\u00fd len obsah bielkoviny, ale aj obsah ostatn\u00fdch zlo\u017eiek. Medzi dvoma cyste\u00ednmi v prote\u00edne sa m\u00f4\u017ee utvori\u0165 v\u00e4zba, zvan\u00e1 <strong>disulfidick\u00fd most\u00edk<\/strong>, ktor\u00e1 stabilizuje priestorov\u00fa \u0161trukt\u00faru dan\u00e9ho prote\u00ednu. Ak by sme v prote\u00edne chceli s\u013e\u00fabi\u0165, \u017ee nebude obsahova\u0165 \u017eiadne odch\u00fdlky, museli by sme pou\u017ei\u0165 <strong>syntetick\u00e9 l\u00e1tky a kolag\u00e9n<\/strong>.
